Hi all!

This is my first post, although I've been using these cookbooks for almost a year.

I ran into a snafu with my Margarita Cupcakes today. I followed the recipe exactly, but they didn't rise, and they were gummy in texture. The flavor is there, but it's as if there's too much liquid (perhaps from the zest?).

This is the second time this has happened...the first with the Pineapple Upside Down Cupcakes I made last summer.

I live in the Panhandle of Florida.

i always have this problem with these! the cake is weird and gummy, and it sticks to the liners like crazy. it seems to happen to me any time i try to use fruit juice in a recipe. i don't know how to fix it, obviously, but i'm kind of relieved to know it's happened to someone else!

I am so relieved to know that I'm not the bad cook I thought I was! Nearly all of the other recipes from the vegan series of books have turned out well for me. The fruit ones are a bust though! Can't wait to learn the science of it!

I have made these a half dozen or so times, about half perfectly and half gummy and weird. I have noticed that when it's hot out/my kitchen is hot, they are gummy but when it's cool in the kitchen they've been good. I don't know why that would be, but your... Florida-ness might be your problem?

Hmmm...I can't say that it was hot or cold in my kitchen. The weather was glorious today, so I didn't need the heat or the air on.

I'm thinking that I need to decrease the amount of other liquid in the recipe? Wish I had more of a science brain to help me figure this out!

it's not usually hot in my kitchen, and these have never worked for me (i think i've tried at least three times). i got gummy cake one other time when i added candied cherries to a white cake batter, and then i wondered whether it might have been the extra sugar from the fruit, or pectin or something. maybe i juice too vigorously or include too much pulp. or maybe my coop sells weird citrus fruits that are natural enemies of cake.
