Talk to me about your favourite main course dishes with asparagus in. I'm not really talking about side dishes, though I'm interested in really awesome ones. I'm talking about main courses - pasta dishes, risottos and the like, preferably where the asparagus is the starring role. Thanks!

Asparagus risotto, of course! I love to add toasted pistachios at the end for maximum greenness.

Something I haven't tried yet is recreating the asparagus frittata/scrambled eggs we used to eat a lot when I was a kid. I think it's not an issue with scrambled tofu, just adding the asparagus with the garlic at the beginning, but with frittata it might take a more skilled approach. The tofu omlettes from VB seem the obvious place to start but as the asparagus would need to be in the batter, they might not form as nicely.

My absolute favorite way to ear asparagus though is roasted with salt and pepper and garlic and pine nuts and oil at 250 for 13 minutes and then splashed with fresh lemon juice, oooohhhh I eat half a kg of those almost every day during asparagus season.
Alternatively, another absolute winner is the Asparagus Spinach dip from Vcon. Mmmmmmmm!

one of my fav's is simple asparagus soup (hot or cold) - just cut the pretty tops off of some steamed asparagus and blend with stock (or water) and some oil... season with salt & pepper, drizzle your preferred "cream", add the pretty asparagus tops and serve with a nice thick piece of toasted sourdough. *drools on keyboard*

I vote for the asparagus spinach dip too! I make it every spring and it seems borderline hedonistic to throw a whole pound of asparagus in a recipe, but it's so good and the capers add something really unique.

I like it Anek's favourite way too, especially when it's really beautiful asparagus at the peak of the season.

There's a South Indian zucchini asparagus soup in a cookbook I have out from the library that looks lovely. I'll email you the recipe if you're interested!

I'm on a very restricted diet, but am at least happy at can enjoy fresh asparagus -- stir-fried with tofu, sesame, and a sprinkling of red chili flakes. Or roasted with sesame seeds. Or in a coconut curry, maybe with eggplant?

Asparagus is one of my favorite vegetables to throw on the grill. Tossed with oil, and any seasonings you like, it's heavenly. Of course, also throw some potatoes or corn, and maybe some other veggies on the grill, along with slabs of marinated tofu, seitan, tempeh, or soy curlls, or veggie burgers, sausages, or dogs.

I made a version of this today and it was really good. I doubled the recipe and added broccoli instead of more asparagus. My asparagus was purple so that was pretty exciting.

I love eating roasted asparagus, though. So easy and good.

I made the mushroom saute from Super Natural Every Day (actually quite a nice book--I have it from the library) today and it was a lovely use of asparagus! There's a version of the recipe here, but I made the original version in the book uses seitan (and I used oyster mushrooms). http://veggiesforreal.blogspot.ca/2011/ ... saute.html

Mushrooms and asparagus are quite lively together with the addition of lemon zest!

Every single time I see it I do a double take.

I like asparagus brushed with olive oil and baked on flatbread dough with pesto, kind of like a pizza. So good!
