I need some ideas on what to do with with sweet potato orzo, I can't find anything that looks good

i'd do some kind of a salad with it. maybe with sundried tomatoes, mushrooms, tarragon, olive oil, and salt and pepper with a slice of lemon on top. then do some italian baked tofu on the side, as well as a green salad of some sort.

I would make a pseudo-risotto-thing. I think there's a recipe for one in The Vegan Table, I haven't made it yet but it sounds pretty good.
