So we've had this can of coconut cream in the pantry forever because I don't know what the heck to do with it, and the hubs accidentally opened it yesterday thinking it was coconut milk. Now I'm stuck with it! It has a gloopy consistency and it's super sweet. Anybody ever used this stuff? I'm thinking of trying out the Coconut Tapioca Pudding from vegweb and just not adding sugar: http://vegweb.com/index.php?topic=40380.0 Thanks!!!

I've actually never had really sweet coconut cream. The stuff I buy is just thicker than the milk...like the stuff on top of the can when the milk separates.

I used coconut cream to do a really yummy Indian rice pudding (kheer). Most recipes call for sugar so I just forgo the sugar until towards the last leg of reducing down the mixture if it needs it and I find adding a bit of coconut milk or cream adds a really delicious richness. I add rose water in mine or orange blossom water. Super refreshing for summer.

Perhaps it would be good in folding into a sweeter type curry like a massumman or green curry and foregoing the usual sugar mixed into them?

Are you sure you don't have cream of coconut, rather than coconut cream? Cream of coconut is sweetened, and is most commonly used for piña coladas. Coconut cream is usually not sweetened.

Tapioca pudding with cream of coconut sounds great. Or maybe a coconut cream pie?

I ended up doing the tapioca pudding - it was really yummy, especially with a few chocolate chips mixed in!
