Lately I've been loving Appetite for Reduction Mango BBQ Beans. I also like to turn kidney beans into beanballs or throw them into a marinara for a simple pasta dish.

Chili of course, but you already knew that... To be honest, though, I'm a total slacker and most times I eat kidney beans in this form: It's great in a tortilla with the usual suspects or with potato wedges/chips and a salad.

+1 on chili. That's just about the only thing I use kidney beans for.

Make a loaf! Or chilli, it is raining over here on the west coast so that is my favourite idea right now.

Always chili. Or a chili potpie, with a polenta crust

Not my favorite bean, so I don't really pursue using it more than for chili and just plain on salads.

Kidney beans are my favourite bean. I use them in chilli's, I make tomato pasta sauce with them, salads, AFR mango bbq beans - basically what everyone else has said.

I look to cook them in a skillet with onions and seasoning then mash them. It's pretty much just refried beans but with kidney beans.
I love refried beans so I don't care what kind they are.

I'm a n00b with dried beans, but for the sake of being more cost-efficient/pennywise, I am giving it a try. I've kept my kidney beans soaking for a day and a half, but realized they could have been done sooner. Now, they've been cooking for nearly 3 1/2 hours, and there's still an unpleasant aftertaste like chemicals. I know about the poisonous compound in kidney beans, but how long am I supposed to cook them before they no longer taste like that/are safe to eat? They were a little stiffer than completely buttery before, but now I'd bet they're practically at the right texture. I'm just using the stovetop method.

fruitbat wrote: I forgot about red beans and rice! The jambalaya in Veganomicon is delicious. This was going to be my suggestion! This is my go-to for red beans. But I do also throw them into chili. And I did make a soup recipe out of Vegan Mediterranean Kitchen once that called for kidney beans.

Spicy red bean pate :) Drain and rinse, add some water, olive oil, lemon juice and spices then blend or mash together.

I just ate some on a bed of lettuce with quinoa, avocado, red onion and carrot. I like them when I cook them properly, I usually mess them up though, or else I buy canned.
