I wonder if it would work if you put them side by side on the middle rack, and swapped them half way through baking time?

I've done this before without issue... Actually only ever with pumpkin pies, hm. I would rotate part of the way through and of course check for doneness before you take them out.

Just don't put one on a rack and the other on the lower rack or the lower rack one will not firm up
