A raw soup? I love my vitamix for recipes like Andy Murray's raw celery soup in his Heretic's Guide to Vegan Cookery. The vitamix gets it perfectly, perfectly silky-smooth, despite all the celery threads.

Peanut butter. Put the PB in a container. Then don't clean out the tub and make a chocolate soymilk, banana pb smoothie.

Yessss!! We got a Vitamix too! I'm turning 39 :) And this will be the first thing my husband makes for me. Also, I loved the sorbets that the demo lady made.

Hummus - I get the biggest charge out of the fact that you just pour in sesame seeds with your chickpeas and seasonings instead of all that tedious sporking out of tahini!
Any peanut type sauce that you make with added coconut milk cooked in the vitamix. Pour it over veggies and rice, dip grilled tofu in it. . . .
Margaritas! One orange; one lemon; 4 limes; squirt of agave; 1 cup tequila; 1/2 cup triple sec; ice Peel the fruit; throw them in with the rest; let the vitamix do its magic; sip.

Oh man. Kittee is dead-on. Can you make ice cream after you make that smoothie?
is it worth it to try to hunt down a refurbished vitamix or a comparable, somewhat cheaper brand? even saving $50 would be ideal.

Yay for Vitamix!! I have a old one (3600 model), and it's still goin' strong.
If anyone's looking for an alternative to a Vitamix, Blendtec is quite nice, too. A friend has one, and it's quite amazing... I don't know if it's cheaper, but the one my friend has doesn't even need a tamper, it's so cool.

You could also make avocado pudding: blend an avocado with about a cup of some kind of milk (coconut would be awesome, but I usually use almond), a healthy squirt of agave (to taste), and maybe some cocoa/cacao/carob powder if you want it chocolatey.
I would probably do the pb smoothie first, though. That sounds pretty magical.

Thanks, everyone, for all the great suggestions! I will definitely try the PB smoothie - that sounds awesome! Mmm...pudding! And I was totally psyched about the hummus, too. And they have a recipe for marzipan! Tofulish - which sorbets did you see demo'd?
Yesterday we made a green smoothie - I called it a Shrek smoothie - and my kids voluntarily drank spinach - YAY!!! Dinner was the tortilla soup - hot, steaming soup from a blender - how cool is this thing? Dessert: some pumpkiny ice creamy thing. The texture you get from some ice and a few ingredients is amazing!
I got mine at WF West Orange. They have a guy demoing from Vitamix who is there till Sunday, I think. Red, white, black are going for $399 and they have a brushed metal one for $449.
