I have two crates of apples... they are red/green mixture and are getting kinda mealy. I'm hoping for something more fun than apple sauce.
Ideas?

Got a dehydrator, or know somebody who does? I'd make apple chips. You could make 'em in the oven, too.

If you have a crock pot, you can cook them down to apple butter without having to do hardly anything except peel them and flip the switch.
You could also make apple pie filling, freeze it in a parchment-lined pie plate, pop the frozen piesicle out and stash in in a ziploc bag in the freezer. This will enable Future You to make freshly baked apple pie with minimal effort.

You can also cut them up into chunks/slices and freeze them for future use. They're perfect for baking and cooking.
