Ok, so there is punk rock chickpea gravy and chickpea cutlets for sure.
What other recipes do you love to use these guys in?

apart from the obvious (ably stated by Ruby Rose), I love Jamie Oliver's chickpea pasta recipe (accidentally vegan), the VWAV chickpea and spinach curry, and just roasted with spices in the oven.

One of my faaaaaavorite soups is made with 400g of chickpeas - it's a 'Chickpea, sweet potato and spinach soup' - and it's from Bike Radar. Here it is: http://www.bikeradar.com/fitness/article/nutrition-super-soups-28580/ (just scroll down until you get to the soup). I promise it's awesome if you love those ingredients like I do. We also tend to put more spinach than the recipe says so it's super nice and spinach-y.

There're a ton of Indian chickpea sauces that you can find recipes for online that are delish over rice, potatoes, or anything starchy.

The Cauliflower-Chickpea Tagine from Urban Vegan is very good, too. And falafel of course. I have a craving for Moroccan food right now. Mmmm.

Roasted! You can make them simply with just olive oil, salt and pepper or you can be fancy. Desdemona has a curried roasted chickpea recipe that is great. I also love to roast them with a buffalo wingz sauce.

I'm very bad at following recipes. I tend to open them and then look at the picture and then make something else that's similar. Pick a daal recipe and make it with chick peas. Or chana masala. A friend of mine made a really good sweet potato and chickpea curry with a coconut milk base, but I doubt there was a recipe other than combining tasty things. This looks pretty good. It's a rogan josh recipe, which is my favourite kind of curry. I'm fairly sure you can actually throw them in anything and not worry about it. Slight apologetic note at the end: In the UK, we have curries like you have "Mexican" food. The idea of not knowing what to do with a chickpea is almost incomprehensible. It's like if I walked up to you and said "I have all these taco shells and this tomato and this cumin, but I don't know if I could make food out of them" or something. So, sorry if I appear patronising; I blame cultural differences.

So, sorry if I appear patronising; I blame cultural differences. In the US, real Mexican food is really only widely available in the Southwest. Taco Bell doesn't qualify. I would say food in the US is very different region to region. Even in Texas, if you go to a Mexican place where all the white people eat, it will probably suck. I was in Houston recently and my Mother in Law took me to her "favorite" Mexican restaurant... ironically enough it was called Gringos. HA! It sucked, but anyway it's really sad because it was Houston, Texas. I was so sad for her. This a total tangent. I know it's been mentioned but the Punk Rock Chickpea gravy is one of those easily missed recipes that a lot people might just skip over or make a different gravy but I have to reinforce that this is the most amazing gravy I wanted to eat it with a spoon, I was in complete awe of it's greatness. I like the Ethiopian-Style Chickpea Stew recipe here: http://www.wholefoodsmarket.com/recipes/2441 I've made it several times, I like putting sweet potatoes instead of regular potatoes.

I second the roasted chickpeas. I tried them for the first time last night and they were wonderful! (I used olive oil, salt, garlic powder, and a bit cayenne).

I just saute them with veggies, put 'em over rice, and drown it all in peanut sauce for a quick weekday meal.
