Lachesis' Alfredo and VegNews mac and cheese.
I made both of them on the same night, exactly to the recipe, for a taste test and was disappointed with both. The mac and cheese was okay but very salty.
They both tasted too starchy for me, both reminiscent of home made play dough.
I know tastes vary.

the first time i made the vegnews mac i didn't like how much crumb topping there was (something i'm surprised to find is possible), and there was way too much EB. when i make it now, i up the cashews and use a few tbs of EB for the sauce. i also decreased the bread crumbs. it's still pretty starchy (the base is potatoes), but i find the flavor much more balanced and a lot less like eating melted EB. it's now my favorite vegan mac, but i've also never been a fan of the "nooch+mustard+onion powder=cheese" vegan macs that so many people seem to like.

I really like the veg news mac n cheese, but I've never made it with all the EB it calls for. When I see that much EB in a non pastry recipe I just can't do it. I use about a tablespoon of earth balance and then the rest olive oil, but i dont usually even put in the full amount of fat called for. it just seems like too much and I also don't add as much salt as the recipe calls for. Using all that EB and all that salt would definitely make it too salty. I really love the base of the recipe though. I just make some adjustments to it so that it seems a little healthier and cheaper to make without all that margarine.

I really do love the Lachesis alfredo, it can get kinda gloppy if I'm not careful with it though. As for the VegNews mac-n-cheese, I've loved it about 60% of the times I've made it...the problem lies, for me, in measuring out a cup of potato (dumb, I know...but I always have trouble with measuring stuff that is cut up, with space in between the pieces, you know?), because if its not really a full cup then the dish becomes unbearably salty. Once I started remembering to go easy on the salt until I taste the finished sauce it became a favorite with me, my boyfriend and our toddler. Ooh also I always add nooch, just because we love it.

I wasn't crazy about the alfredo but I love the VegNews mac and cheese.

I really like the VN mac & cheese, but I've never followed the recipe to a T, just eyeballed everything and seasoned to taste. It's the only mac recipe I've found that doesn't start to get gummy as soon as it cools down to a temperature you can actually put in your mouth.

That mac and cheese is my favorite! But I always reduce the salt (to 1 tsp, I think?) and mention that to anyone I recommend it to. And I usually skip the breadcrumbs and just cover the pan with foil. Not that I don't like breadcrumbs, it's just laziness.

I made an almost fat-free version of the VegNews recipe [no margarine or cashews, but a bit of almond milk] and mixed in a can of tomatoes before baking. Hot out of the oven, it was rather bland. The next day, however, it was delicious. I have no idea why!

I haven't tried either, but I love Isa's VWaV alfreda sauce. The ingredient list sounds so gross, but is comes together to make magic.
GuineaPigs recipes in Vegan Comfort Food actually taste like alfredo.

I love that alfredo. I've made it twice in the last month. Haven't tried the mac & cheese. It'll be on my list.

I did not like that alfredo at all.

I haven't tried either yet but thanks for the heads up that some adjustments need to be made. Have you tried the New Farm recipe?
If it makes you feel any better, I think I'm the only one out there that hates the chickpea cutlets.
