i want to make hummus, but my tahini has been sitting out on the counter for a while. Will it be really obvious if it's rancid?

How long had it been open for? I don't keep my tahini in the fridge, so i would always assume it's ok unless it has new lifeforms trying to escape from it.

I think it'd have to be sitting out in the heat for a long time. I keep mine in the fridge, but I think it's one of those things that you could leave out. I'd just taste a little bit..

I think that stuff is good almost forever. I had a jar in the back of my (not fully functional) fridge since January and I only threw it out this week because I went to use it and there was mould on the inside of the lid. The rest in the jar didn't look or smell any different, though.

I get the refrigerated tahini at TJ's so I think I totally get a different tahini than you guys. But yeah, I've had it last for up to near a year before. I only tossed it out because it seemed like I felt like it SHOULD have been rancid by that point but didn't appear to be.

I would say you're fine unless it's been super hot, months, and it smells rancid.

I usually smell it (whatever it is). If it smells fine, I taste it. If it taste fine, I use it. Otherwise, it's out. Haven't got killed yet.
