Does anyone has any recipes for Japanese curry buns? It's always been something I've wanted to try, but it's not vegan or readily available here. Making it seems to be the only solution.

Do you mean the bright yellow buns that are steamed? Or the kind that's coated in panko and fried?

I don't think it's coated in panko. I think it's more doughy and can be steamed, baked, or fried.

Mmm sounds very good. I love steamed buns.

Is it a solid bun or is it a vegetable mix wrapped in a bun dough?

There is a recipe in Asian Vegan Kitchen for Curry Puffs but they are Malasian.

Thanks for the Just Hungry recipe, but I don't know how I'd go about veganizing that. I'd normally sub the eggs with flax, but it looks like it wouldn't work too well.

If it's the kare pan I think you're talking about, then the dough is really similar to Chinese bao. The LA Times has a good recipe for it. I've made it several times and it's a fairly simple recipe to follow. For the filling, I imagine you can just use your favorite curry recipe, but reduce the liquid a little bit so the bread dough doesn't get too soggy when you steam it.

The Just Hungry blogger, Maki Itoh, posts a lot of vegan recipes. You could post a question on her blog about how to veganize the recipe.
