I once bought that tahini in a can and it was so difficult to stir (even after refrigeration) that I gave up on tahini for three years. Well, it tastes really good so I should get back into it. How do I deal with it, though?! I wish I could buy it in smaller quantities. If I had a vitamix (or a blender, for that matter) I'd happily make my own.

The tahini in glass jars lasts FOREVER in the refrigerator, so the fact that it's in a large quantity shouldn't be too big of an issue. It can be a little tough to stir, but the stuff at the bottom is more like sesame seed butter, so you don't have to incorporate all of that everytime you want to use it. The stirring is really to get the oil from the top of the jar worked back into the rest of the tahini.

I'd just buy a jar of nice tahini and give it a shot again. Good luck!

Pretty much this. I get mine from the Arab grocery store and it's the same brand as my GF's Jordanian mother, so you know it's good (it has a green label with red letters, can't recall the name)! And it really does last a long, long time. And the more you use it, the more it ends up in your food. Like esme's sauce!

i get the tahini in a glass jar as well. when i get home from the store i turn the jar over upside down (unopened) for a day. then i flip it over the next day and shake it up a bit. makes it much easier to stir. it's rare that i have to stir it again after opening and keeping it in the fridge.

I recommend the Arrowhead Mills brand in a jar. It's my first jar of tahini ever, and no stirring issues.

I use a giant bamboo skewer to stir the stuff everytime I use it. I really like the tip about turning it upside down for a day before opening, though!
