I got a bag of it in a package swap and I wanna do something special with it... any ideas?

There is a great recipe for peanut butter choco chip cookies using coconut flour in The Complete Guide to Vegan Food Substitutions. It's wonderful. I've made them a few times.

Oh, coconut flour - it's my latest secret (and seriously non-student-budget-friendly) addiction! Other than that I've mixed coconut flour into hot oatmeal and stirred it into soy yogurt + some vanilla extract and a squirt of agave (if it's not sweet enough).

I've been wondering about coconut flour cause I can't buy it here. Could you make it by grinding unsweetened shredded coconut in your foodprocessor until it's very fine? What's the texture like? Kind of grainy like almond flour, or very fine like all purpose flour?

the texture SEEMS very fine...until i tried to use it as a vegan powdered milk substitute for hot chocolate....then i discovered...it does not dissolve and it ends up gritty and crunchy.... bleh. i guess because its the whole coconut and not just dried coconut milk :( id say its good for baking, it just doesnt work in drinks! :/

Thanks for all the suggestions! Teddyplanet, that cake sounds really good! PorshaJo, those cookies sound perfect, but sadly I don't own that book. Tried looking on-line for the recipe, but didn't see it anywhere. Maybe I'll ask for it for Christmas. kleineKaiserin, I will totally be baking those muffins this week. Will let you know how it goes!

I love just replacing 1/4 of the regular flour with coconut flour in any vanilla-ish recipe. It makes everything taste like twinkies!

this might sound nuts..this isnt about what you SHOULD do with it, but its what i have been doing with it....i bought a package of it to use for vegan hot chocolate mixes and it was a total fail. so i have this 8 euro/12 dollar package of coconut flour sitting here...ive been sprinkling it on salads and such. its pretty decent on a carrot salad with cilantro, tahini, lemon, and smoked salt. have sprinkled it on spinach salad too...and on steamed potato chunks with other stuff. i dunno maybe im just weird...but i was out of nooch and usually use nooch on all that stuff...and it certainly doesnt taste anything like nooch, but its close to the same consistency lol

Bump! Can I use it in korma instead of shredded coconut? Maybe I'll just do it anyway because I am dying for some curry right now. I'll report back. But, if anybody else has already used this stuff for savoury dishes, I'd like to know.

I use it in seitan sausages. It's really, really moist and succulent.
