Thanks for the Just Hungry recipe, but I don't know how I'd go about veganizing that. I'd normally sub the eggs with flax, but it looks like it wouldn't work too well.
If it's the kare pan I think you're talking about, then the dough is really similar to Chinese bao. The LA Times
has a good recipe for it. I've made it several times and it's a fairly simple recipe to follow. For the filling, I imagine you can just use your favorite curry recipe, but reduce the liquid a little bit so the bread dough doesn't get too soggy when you steam it.
