I usually make smoothies, but i have a few pounds of it consuming my freezer space. I'm trying to find some recipes where the different texture won't really matter. I assume it would still work in Smoothies Lasagna Vegan Dad's Potato/spinach curry Other ideas/recipe favourites?

There is a recipe in the veganomicon that uses 3 frozen boxes of spinach, I think it is the spinach noodle kugel. I always want to make it but I never have that much on hand.

I always throw some in soups and stews, but also spinach dip and pesto.

I use frozen spinach in tofu scrambles or in pasta dishes. I steam it out a little first and then drop it in the sauté pan with everything else.

I defrost it, or saute it from frozen, and use it it a fritatta.

I came to say the potato spinach squares from VB, but Panda beat me to it. So I'll add that I just cook them with a bit of water and salt until all the liquid is evaporated, and then add lemon juice, pepper and nutmeg, and serve it as a side to chickpea cutlets or scrambled tofu.
(Oh, and thanks for answering my unasked question of whether frozen spinach can be used in smoothies. yay!)

I always add it to spaghetti & marinara. Also great in lasagna and stuffed shells.

There's the easiest recipe ever that uses up a box at a time - fry an onion & some garlic and mix in a box of spinach, a can of black beans, some frozen/canned corn and a jar of salsa. Serve in tortilllas or on rice. Totally not gourmet, but surprisingly good. You can add some cumin too if you want to be fancy.
Also, my dog loves thawed spinach in his dinner, so you might try that if you have a dog.

These ideas are all great, and reminding me to restock on frozen spinach, but you also can't go wrong with frozen spinach if you put it in a calzone or pizza with mushrooms and olives and artichokes, plus white beans if you like those on your pizza. This is the way I eat it normally, since otherwise I may not eat that much of frozen spinach in one sitting. Make sure you defrost it first and squeeze all the water out or else you will get the crust soggy.
