I brought a tofurkey and mustard sandwich, a small bag of pretzels, and an apple. I'm being cute with my first lunches at new job.

I took smokey split pea soup and a box of rice and peas but remembered when I got to work that I'd arranged to go for a curry with my sister for lunch, so ate the rice and peas when I got home this evening.

Its this kind: http://www.toufayan.com/pita/low-carbnot all that low carb, about 16g per pita, but i only eat half of one, (regular ones are over 40g per pita!). and they are delicious. I looked at the ingredients, but they didnt seem all that different from regular pita bread, it must be in the amounts of ingredients they put in them or something.

I had Arabian lentil and rice soup (AFR) for my work lunches this week. Work snacks = orange slices, hummus and cucumbers, sunflower seeds, macadamias, grapes

Looks like they subbed most of the wheat flour with vital wheat gluten and a couple of other low carb flours. I got a little low carb inspiration too (after a carb binge yesterday) and baked a walnut/hazelnut bread, subbing the whole wheat flour with a mixture of equal volumes of vital wheat gluten, wheat bran and soy flour. I sweetened it with stevia. It turned out quite nicely, so that's my lunch and snacks for today.

Thought I'd be eating out today, but my meeting schedule made that impossible. So, I brought a frozen burrito. Basically the only thing I could find quickly this morning. I have cereal at work in case that's not enough.
I also brought a clif bar to eat toward the end of work before I go climbing!

brown rice pasta with my sister's greek-ish pasta sauce (kalamata olives, tomatoes, squash and zucs, onion, white beans, bell peppers and mushrooms) and a sprinkle of nooch.
ETA: i love this thread so much. it gives me some great ideas for lunches. thank you all so much!

Portobello pepper steak stew and caulipots! It's an AFR-tastic day all up in this.
I had a handful of raw almonds, dried cranberries, and choco chips for a midmorning snack, and this afternoon I have some fruit leather. Fruit leather is a new thing that I am enjoying.

leftovers from last night..spaghetti squash with kale and white beans topped with easy breezy cheezy sauce from AFR. Sounds strange I know but last night I had a craving and it turned out to be really yummy. happy monday everyone

Leftover curry coconut chickpea and kale stew, a mixed fruit salad (strawberries, kiwi, clementines), baby carrots and cherry tomatoes with roasted red pepper hummus and a small handful of pb-stuffed pretzels.

All those sound amazing! I did some leftover noochy spaghetti with 40 clove broccoli and chickpeas.
Today, I'll be home around 2:30 and I don't leave till 10:30ish, so I placed some root veggies/onions/garlic/ginger/beans/broth into the slow cooker, so I can come home to soup and some olive oil bread from the freezer.

for lunch i've got a white bean-brown rice-artichoke veggie burger over a salad with some homemade italian dressing.
had to pack my dinner, too (i have class after work) - i've got a spicy corn-rice-'n-bean salad!

Wow, so much AFR love!
I eat lunch and dinner out of the house, so I usually do some sort of veg-protein-rice thing in the bento for lunch and a stew with rice in the thermos for dinner.
Today's lunch was AFR baked falafel with hummus, and some brown rice with steamed broccoli and gomashio on top.
Dinner was the AFR seitan pepper steak stew thing with brown rice. And some clementines and strawberries for dessert.

I'm eating all AFR this week! Making the sushi roll salad for lunches all week! I made the rice and veg mixture last night so all I have to do is chop the lettuce and throw everything in my salad container in the morning.
Baked falafel, herb cauliflower, tamarind bbq tempeh & sweet potatoes, black bean zucchini and olive tacos, and 40 clove chickpeas and broccoli.
It's an all AFR kind of week at my house!
