I bought a salad that I made last night of brown rice, tomatoes, peppers, chickpeas, jarred jalapenos, olives and capers in a simple dressing and an alpro chocolate pudding. Oh and a pear and banana for later when I get hungry at 3 o'clock.

Leftover seitan tikka masala that I hope froze/defrosted properly. I have week-old cilantro mint chutney too that I made, but ever since I took a food safety course I'm really nervous about that kind of stuff. It does has lime/salt, so maybe it's fine? I think I might not risk it.

Leftover Tofu Scramble (kind of greek-ish style: Mushrooms, zuchinni, bell peppers, red onion, sun dried tomatoes, chickpeas, fresh tomatoes, fresh spinach, dried basil and oregano, and fresh basil) and some breakfast potatoes cooked with red onion, fresh thyme, and a shitton of cumin. Man I love cumin.
Also have a small amount of gyro seitan, taziki, and a half a wrap...in case I am still hungry. Ok, well I will eat it if I am hungry or not, who am I kidding.

Pretty In Pink Salad
Spring mix, baked tofu, green olives, sunflower seeds, rice pasta, red onion, cucumber, tomatoes, and pickled beets! It is pretty damn tasty and pink from the beets. I poured some vegan ranch dressing I found in the store on it but it's a little too spicy for my liking. Something it it is burning my mouth up.

Lunch/snacks for the day: carrots and hummus, grapes, two oranges, dry roasted edamame, and a luna bar. I'm a grazer.

in today's bento: fluffy brown rice (I discovered the yummiest brown rice ever), steamed edamame, braised shittakes, kimchi and a small green salad of romaine and AFR balsamic dressing tucked in the corner. Also strawberries for my afternoon snack.

I'm excited to get to start posting in this thread! I'm starting a new job on Monday that is 10-2 Mon-Fri, but with no set lunch (since it's only 4 hours), so I'll be eating at my desk. I'm planning lots of things that will be good at room temperature. Maybe for this week I will do a big grain salad that I can take each day, with a piece of fruit. Not creative, but it will be easy to grab as I'm going out the door while I'm getting used to having to be at a new place on time each morning!

Today is brown rice and the seitan and broccoli with pantry BBQ sauce from the PPK blog. I love this sauce so much! My seitan came out really weird this time, though. I don't get it. I think my gluten was off somehow. It's weird. Still tasty, though, just not quite as good as usual.

Trying to start the semester on a good note: avocado, hummus, bell pepper and tomato sandwich on whole wheat bread, with pretzels, bell pepper strips and baby carrots and more hummus for dipping. It's so cold out that the tomato in my sandwich started to freeze from sitting in the car.

Today I brought a whole wheat pita with Tofurky Italian slices (I love Torufky so much), shredded carrots, spinach, and balsamic vinegar. Delicious! And a zevia orange soda.

Wrap with pinto bean hummus, seitan taco crumbles and grated carrot, eaten after my workout. It was ok. I also had an orange.

Salad with chickpeas, cashews, carrots, cabbage, and raisins with the miso tahini dressing from V'CON. I added a ton of lemon juice to it and it's delicious, can't wait to dig in.

I packed lunch for my boyfriend today and I thought he was going to drown in drool as he watched me make it. It included:
-Some leftover tomato/barley/spinach stew-type thing -Cheese (the "Great Smoky Mountain" one from Vegan Diner) and carrot sticks -Homemade white bean + sundried tomato dip with crackers
