Bulgur pilaf with chickpeas, mushrooms, onion, garlic spiced with allspice and cumin. Salsa Lizano on top, carrots on the side!

Gardein pulled BBQ "pork" and a baked potato with EB. The pork is disturbingly meat-like. Think I'll stick to the spud.

I need to cook from AFR more often. Your lunches sound so tasty.
Today I had leftover stew of TVP beef, daikon, carrots, and bok choy. I also picked up a loaf of whole wheat sourdough for carbs. For snacks I brought dried cereal, a granola bar, clementines, and a pear.

leftover cashew vegetable korma from the ppk blog. it's delicious everyone kept saying how good it smelled. Usually I bring some sort of leftover.

This morning I quickly toasted a big handful of sunflower and pumpkin seeds and prepared a small box of dressing with sesame oil and lemon juice. On the way to work I picked up a bag of mixed salad. I've now combined all of that in the big lidded bowl I brought the seeds in and it's a really nice light but filling lunch, and for less then one euro too!
I also brought two sliced apples and a small box of tahini for a dip snack this afternoon.

This thread is very inspiring..lots of great ideas. Today is another leftover day. For the first time I made a loaf last night using the magical loaf studio..it was a little on the moist side but still very good. I also brought some roasted cabbage. I try to just use leftovers as much as possible.

Alpro custard, instant coffee and a handful of Swedish Fish.
It's pretty obvious I didn't have time to prepare anything. But I do have some dried peas soaking in my kitchen... And I'm planning on eating a huuuuge bowl of mixed salad and tofu cubes when I'm home.

I got a boxed lunch out of the freezer this morning. I think it was AFR vegetable korma with coconut butternut rice, but I'm not 100% certain.

we made ancho lentil tacos sunday night - so i took the leftover lentils and made them into burgers using brown rice, carrots, onion, and green pepper. this means i'm having an ancho lentil burger with rice cheeze, red onion, and relish. w00t!

I love that, on occasion, 8Ball. I usually label all of the boxes I put in the freezer but sometimes there is a mystery one in there.
I made the Caesar Chavez dressing last night so today I have a salad and lots of veggies, plus two leftover chick'n nuggets and some scrambled tofu. Four fruits and an orange scone for snacks.

I need to make some food tonight so I have lunches this week... I'm determined to not give into eating out!
Today is a frozen burrito with fruit (I have blueberries, grapes, a banana, and a pear... the fruit will be for the next few days) since it's the only thing I could grab quickly. I was going to eat my leftover stuffed squash from last night, but I got hungry at 1am and finished it off then.
Dinner after work on my way to the gym is a reliable PB&J sandwich, but with my grandmas homemade crabapple jelly! I have a feeling I'll be eating one of these every day in the late afternoon or right after work.

Bagel with tofutti cream cheese and cucumber, baby carrots with roasted red pepper hummus, strawberries with a dollop of soy yogurt, an apple, 3 clementines. Oh and a small handful of PB-stuffed pretzels.

How do you like to pack your lunches in the freezer? I'd like to do this more often, but I only have a limited amount of tupperware and I can't have it all occupied in the freezer at once.

I can't get enough of chickpea salad lately, so I bought it again for lunch this week. That's mashed chickpeas, a bit of nayonnaise, diced celery and lots of capers. I put it in pita pockets with some daiya and shredded lettuce.

Made a seitan o greatness log yesterday, so I made a sandwich out of that + veganaise, lettuce, spinach, red onion and relish. Plus a small handful of rice chips. Going to eat a grapefruit soon. Then an apple before I leave work.
