today's lunch was lentil, brown rice & collards soup, a pb granola bar and I have a cara cara orange and an apple for snack later.

I made the "vegan bowl" from the bowl section of AFR. If you're lazy like me and don't want to look it up, it's just brown rice, steamed kale (but I had broccoli...I still don't have enough kale love in my heart), baked tofu...I made the recipe from AFR, and it's all topped off with the Caesar Chavez dressing. It was so good but I only got to eat half thanks to a 10 minute window between classes. I have everything ready to take it again Thursday.

I brought leftover curried chickpeas and cauliflower from last night's dinner, along with some whole wheat sourdough bread. For snacks, I had dry cereal, some roasted nuts, clementines, and pineapple chunks.

A "bowl" of sorts. A bed of romaine tossed with homemade red wine vinaigrette and cucumber slices, with warm slices of Bryanna Clark Grogan's breast of tofu and warm brown rice, with a tablespoon of hummus in the middle. Tasty and filling. I love warm food in salads, especially in the winter.

Mixed salad with yellow pepper and cucumber and cut-up tofurky sausage. (The Italian version tastes almost exactly like my baked travel sausage recipe made with Italian herbs and spices!) Some Swedish Berries. Tea.

Leftover thai roasted root curry from AFR & eggplant curry or whatever from kathy hester's slow cooker book. And a clementine!

more hominy-bean-'n-rice mix with some semi-homemade (i bought the corn torillas and spiced them up) baked torilla chips with lime juice, ancho chili powder and garlic salt.

Another early shift, picked up a skinny soy mocha on the way (wee!) and brought a banana and two fiber cakes from Trader Joe's. Wish my banana were riper though.

Wish my banana were riper though. hominy is dried corn without the hull and germ. it looks like kind of like puffed up corn and tastes delicious (a bit like barley but fluffier)! Lunch today: Salad Wraps- spinach tortilla, avocado, hempseed, sprouts, spinach, jicama, fresh basil. plus a side of heirloom tomatoes and marinated olives and garlic, and two nectarines.

We started moving yesterday and the contents of my kitchen are currently split between our old house and our new one, so I had an Amy's tamale verde frozen dinner for lunch.

I didn't go to work today (snow day!) but I ate what I was planning on bringing to work at home. Mac and cheese with ctate's queso, black beans, and broccoli.

boring today... a sandwich with tofuky, avocado, mustard, and mayo plus grapes and blueberries to snack on.
I really need to be home some evening so I can make food that isn't a sandwich!

Fee - i don't know where ya live, but if it's cold where you are you can always put your lunch in your car the night before. i do this on cold nights. sometimes i'm a bit of a zombie in the morning and just forget.

I just had the last of the roasted chickpeas and really old white rice for breakfast with some srichacha. Lunch is hasitly packed black beans, tortillas chips, ffl queso and a clementine.

A bagel for toasting with some tofutti to spread on one side and roasted red pepper hummus for the other. Cucumber for topping the bagel. 3 clementines, an apple, some fresh pineapple I couldn't resist buying at the grocery store, a handful of PB pretzels.
