Leftover Thai Green Beans (AFR). I always put some tofu in it, but i ate it all except for one sad little piece.

Some fruit, some expired soy yogurt (hope it's ok!) and a new larabar - Jocalat, chocolate hazelnut.

Leftover buddha's delight, a minneloa tangelo (my favorite!), an apple, some dried mangoes (I've been on a real fruit kick lately), cereal, and whole wheat sourdough.

Fried tempeh strips marinaded in a lot of soy sauce, garlic and smoky paprika accompanied by a bag of mixed lettuce. Another library inhabitant (total stranger), sitting five feet away, complimented me on the wonderful smell of my lunch, so guess I did a good job :-)

Only thing is, I forgot to bring a fork, so I had to eat with my hands. (I brought a small box of oily dressing, but since I would have had to mix it in manually and did not look forward to cleaning my oily hand in the library lavatory, I saved it for tomorrow's salad. The tempeh was so good, I did not need dressing anyway)

Hurrah for this open minded public library that does not mind people eating in the study area! (They also allow shouting and running toddlers, which is less nice, but hey, the snack-friendly environment makes up for that big time)

2 more pieces of pizza like yesterday (basil cashew ricotta, tempeh sausage crumbles + more), some trail mix I made (walnuts, pumpkin seeds, sunflower seeds, hemp seeds, raisins, goji berries, choco chips and coconut shreds), a slice of fig loaf, some carrots and cucumber slices, 2 kiwis.

Sugar free tofu chocolate mousse (YUM, I need to make this more often), tempeh bacon sandwiches and flax/almond meal brownies (baking experiment, not quite happy about them yet).

I felt like soup today, and luckily, I got the ingredients for it in our CSA box. So its cabbage, leek, carrot, bean and millet soup!

It's as easy as it is delicious.
1. Puree tofu (silken is nice, but any old soft or firm tofu will work). Add some soy milk if it's very thick.
2. Mix in some sweetener (like stevia) and cocoa powder or melted sugar free (99%) chocolate. I usually add a little melted coconut oil as well, to make the mousse nice and creamy. Taste for the amount of cocoa and ajust to preferred intensity and sweetness.
3. Put in the fridge to firm up and enjoy!

This stuff fills you up very quickly, so a little goes a long way. Also, it tends to go sour within a couple of days, so don't make a huge batch unless you have someone to share it with. I don't think it freezes well, because it will probably get 'frozen tofu' texture and separate.
