Leftover Pad Thai (adapted from VWAW)

and my same boring everyday snacks/breakfast: instant oatmeal, luna bar, banana and orange. boooring.

Love that pad thai though. When i was heating it up in the kitch at work, people commented it looked and smelled 'professional' and asked if i was a chef! haha...no.

Earlier this week, my manager got a gift pack from some clients/vendors that included chocolate and garlic. Yeah weird huh? anyway the garlic was one GIANT head of elephant , and the rest some purple I had never seen before. I am kind of crazy about garlic, so i made 40 clove chickpea and brocoli with the purple last night, and some caulipots with the elephant head of garlic roasted & blended in there. And baked tofu that i made super garlicy as well.

It was super garlic goodness. Leftovers today. I will smell up the office and looking forward to it!

Leftover VWAV broccoli chickpea casserole (so goooooooood), pumpkin/tomato/squash soup with pastini and corn, raw baby carrots, and roasted golden beets.

That casserole is seriously ridiculous, instead of one cup of veg. stock, I used 3/4 cup veg stock and 1/4 cup almond milk. I also sprinkled breadcrumbs across the whole top and cooked uncovered for an additional 10 minutes, totally crisped up. Then I ate half of it while watching Workaholics in my pajamas.

I brought baby carrots and bean dip with an orange. I should have brought more. I will probably have to get something for a snack later. I was hoping there were peanut chews across the way from me at work. No dice.

I haven't made anything curry in a couple of weeks, what is wrong with me?

I have AFR's Jamba stew today. That stuff is so easy to make! And so colourful. And it has bay leaves - I always forget to remove bay leaves so now it's a thing in our house - the person who finds a bay leaf will have good luck.

I have leftover AFR Chickpea Piccata, a braeburn apple, and some carrot sticks. We just made the piccata for the first time last night and it was SO GOOD. I can't wait for lunch!
