Leftover: half of Chikn ranch burger from Native foods cafe with leftover fries. Also salad from home; Boston lettuce, Green Asian Eggplants, and Cucumbers.

I usually work from home and don't pack a lunch, but I've been attending a conference all week. Today I packed leftover black bean and corn salad on a bed of purple spinach and some snap peas and strawberries for snacking.

Mixed greens salad, pink tomatoes, leftover Caribbean gratin from Moosewood New Classics (sweet potato, coconut milk, black beans, rice, cilantro, with a cornmeal crumble on top), cherries, almonds. I'm in a noshing mood today.

I was going to make a big salad today, but I didn't have enought salad dressing to make it any good.
So I took my salad, and put it in a pita!
Low carb pita (Tofuayan-best store bought pita I have ever had, low carb or not!) AFR Hummus 1 tomato (from my garden picked this morning) Sliced cucumber and yellow bell pepper 1 small avacado handful of spinach drizzle of AFR ceasar dressing.
Whoa. I ususally eat salads if I don't have leftovers, but this was so so good and so much more filling than a salad. It was not too much more calories than a salad either (except for the WHOLE avacado I could not resist eating) I will have to do this more often.

Left over Veggie Pot Pie Stew. Unfortunately, my yellow split peas didn't get soft and I didn't realize it until after I was done making it. So, it's yummy... with crunchy bits...... Next time I'll pay closer attention to those little mustards.

I packed some leftover pasta salad (multicolor pasta, green & black olives, orange pepper, artichokes & italian dressing), plus a leftover piece of pizza (Daiya, spinach, tomato & mushroom from Peace O Pie in Boston).

Leftover VB Swiss Chard Frittata, salad with mixed baby greens, cucumber, tomato, red pepper and a homemade tahini-miso dressing. I drizzled extra dressing on the frittata, yum. Also, a bit of coconut yogurt with these awesome wild blueberries we bought at a roadside stand near the cottage.

Leftover Chickpea-tofu curry, and roasted broccoli. Yum, I can't wait for lunch! <3 leftovers.
Snacks + Breakfast: Instant organic flax oatmeal, banana, apple, peach, baby carrots and some hummus I made last night. Basic hummus (no tahnini! I ran out!) with a bunch of parsley thrown in.

cumic-rubbed spiced Seitan-Steak, fried mushrooms and onion fajitas with peppers and guac. Best lunch ever.
Make a seitan roast last night. this morning I fried onion/mushrooms and sliced seitan with cumin, chili powder, coriander, garlic powder and leftover burrito seasoning mix. Finished it with a squeeze of lemon. Tossed into a wrap with sliced green peppers and leftover guac.

I packed a bunch of nice CSA stuff (snap peas, red peppers) with some guacamole and cherries but then I forgot it at home. Awesome coworker to the rescue! He surprised me with a MASSIVE sandwich piled high with all sorts of veggies, dijon mustard, and he even had the deli put some hummus on it for me. I need to whine about forgetting my lunch more often.

I packed a homemade veggie burger with wheat bread, a snack size bag of pretzels, an apple, and a banana. With a side of terrible coffee cuz that's what my office brews.

The best salad ever: romaine, green grapes, a yellow pepper, carrot, tofu baked in Braggs and lemon juice, roasted beets and yam, with a creamy miso dressing. SO GOOD! I'm having the exact same thing again tomorrow.

Leftover rice paper roll innards - rice noodles, smoked tofu, mange tout, grated carrot, scallion, mint, coriander, peanuts with a peanutty/soy/chilli dressing to drizzle over - looking forward to it!

Leftover seitan roast, rubbed with cumin/taco spices, sauted with onion/mushrooms in a wrap with lettuce and salsa! Some toasted Nori Sheets, local organic pair, a local organic plum and a handful of green beans.

Leftover pad thai (sorta). It was really good last night, but in my experience rice noodles don't reheat well, so leftovers are just kinda meh. Also, raspberries.

Leftover Ancho/chipotle lentil taco filling (from the PPK blog-dinner last night) turned into a salad with a cabbage mix + Pico De Gallo i made + half an avacado.
I found that if I mix the pico with the cabbage and add a bit of salt about 10 minutes before eating, that the cabbage gets more flavor and is more yum
Also breakfast + Snacks here at work: Soymilk + protien powder (trying out Amazing Meal, its not amazing, but not bad either), fresh cantaloupe, hummus + veggies, an apple (that i probably wont eat)
My food for today sounds much better when I write it all out
