Bowls are the best! Today was a burrito with refried beans, greens, and tomatoes, carrots, and an apple. Snacks were overnight vegan oats with granola and coconut on top and an orange cranberry muffin. I've got tomorrow packed up as well. Burrito with refried beans and brown rice and hot sauce, a peach, and some sauteed kale. Snacks are another orange cranberry muffin and a breakfast cookie.

Pot pie with olive crust from Veganomicon, apple and nectarine for dessert. Morning snack: bread and tofu/cashew spread. Afternoon snack: will have to buy something (annoying!). Flask of tea.

AFR Ceasar salad with some extra additions - red cabbage, yellow bell pepper, with a side of red lentil hummus. Snacks for the rest of the day: strawberries, apple and walnuts, more red lentil hummus with carrots and celery for dipping. I have a class later today so not getting home until late, hence the mountain of food to hold me over.

Sticky rice (helllllooooooo new rice cooker!) with homemade nuoc cham sauce and gingered Thai take-out tofu. I'm pretty sure there might be some leftover veggies in there, but I make no promises.

I had nothing planned, so I hurriedly grabbed some random things (determined not to spend money or eat another damn bagel!): anadama bread and EB coconut-peanut butter, plus unsweetened soy yogurt with oats and a little maple syrup mixed in, topped with ground flax and frozen berries.

Today is kind of a hodgepodge since I rely on leftovers for lunches and I didn't have any! So today is a baked pepper squash half with the center stuffed with canned baked beans, some organic baby greens in a bag with cucumber and red pepper, coconut yogurt with granola and raspberries.

my Trader Joe's finally started carrying the bags of pre-washed organic kale. I have never been a big kale person, but I decided to try a massaged raw kale salad.
Last night i took a few cups of chopped Kale and 'massaged' with a bit of olive oil, salt and lemon until it got soft.
This morning added more lemon, salt, some red wine vinegar, red onion, yellow bell pepper, cucumbers, a shitton of tomatos from the garden and half a chopped avacado
It was pretty good! a LOT of kale for someone that is trying to get into it though haha. Will have another salad later this week, might try a tahini dressing with bean sprouts instead.
Also a half a pita with leftover edamame pesto from AFR. Yum.

Chickpea salad (made with red onion, celery, scallions, sunflower seeds and this AMAZING maple mustard i found) on a multigrain wrap. Apple, peanut butter protein bar, and carrots/snow peas on the side.

An AFR inspired bowl! Brown rice, lentils, steamed kale and broccoli all topped with Caesar Chavez Dressing yummmm. I will have to start bowl-ing it to work these days, another hour or two left at the office and I want another bowl....

A thermos of split pea soup with pita crisps. I brought a big container of peach, plum and kiwifruit slices for a snack but I ended up buying some trail mix to go with it.

AFR is by far my most used cookbook. I am slowly working my way through all the recipes (been making about 2-3 recipes from AFR each week for the past month or so). It's totally worth it, my omni BF even looked through it a couple of days ago and made requests for certain dishes! Gotta love when a cookbook caters to my healthy/vegan needs and sparks the interest of a meat-loving omni.

Yesterday I packed dinner to take with me to grad school. I have a Ms Bento with 3 containers and I filled it with leftovers of:
1. Kitchari (brown rice and Chana dal porridge) 2. Punjabi curried Lima and pinto beans 3. Chana masala
And I tucked in a few mixed greens parathas that I had left too.
It was delicious but afterwards I was like oh holy hell why so many legumes!
