Hi!
I've been on the hunt for the past few years for a vegan rainbow cookie recipe! My husband grew up just outside of NYC and these little morsels of goodness were a staple of his Jewish diet. It's been years since he's enjoyed them. We make it to NYC quite often and I've called every vegan bake/pastry shop around-even the restaurants-and no one has them on their menu!

Any pointers would be amazing!

I've never heard of these. Do you have a picture or recipe of the non-vegan cookie that we could use as a guide in figuring out what you are looking for. Or maybe everyone knows about these but me!

One of the owners of Papa Ganache (vegan bakery in NJ) used to post on the old boards, and I am pretty sure I remember her posting a recipe for rainbow cookies. Maybe if you contacted her she could make a batch for you. They ship if you aren't nearby.

Thanks! I'll investigate. I did reach out to Isa Chandra-she responded that the recipe wasn't posted because she wasn't happy with the results. I'll still try my hand at veganizing a non-vegan recipe and see what damage I can do to my vegan pastry chef skills:)

There have been rainbow cookies at Peacefood cafe lately. I'm not sure if Kristin is going to make them all the time now that the holidays are over. But they've been there on a pretty regular basis for a while. And if you wanted to you could probably special order a batch.

You know-my husband and I ordered our Thanksgiving meal from them-we were in the city for the holiday weekend. And of course we asked if they would have those available...(they didn't) We typically stay just a few blocks from them when we're in the city so glad to hear it's been a "regular" on their menu:) Hopefully next time!

Yea I know Kristin has been working on the recipe for a while. I think we may have had a couple when I was there Wednesday night. Your best bet for any kind of special pastry is the weekend (that's when we have croissants and cinnamon buns!) I know for Thanksgiving there was a set menu just because Kristin had so much to do, but I'd be happy to ask her if she could make them for a special order.

Oh man. I would LOVE a recipe for these. I used to inhale these in ungodly quantities when I was younger!

Then again, maybe it's for the best that I NOT have the recipe...

'twas me, i'd play around with this recipe http://smittenkitchen.com/2008/12/seven-layer-cookies/ and maybe do a little experimenting with frothing egg replacer the way hannah did in her macaron's. you could also buy some of the angel food meringue and play around with that. sounds like a fun project!
