Tonight: biscuits and gravy, chickpea cutlets, roasted brocolli
Monday: seitan burritos with refried beans, rice, daiya, salsa, sour supreme
Tuesday: pumpkin baked ziti with green beans
Wednesday: probably leftovers
Thursday: Field Roast meatloaf was on sale, mashed potatoes, brocolli and corn.
Friday: out
Saturday: visiting my parents. Going to make french onion soup and homemade seitan reuben sandwiches!
Sunday: Maybe papusas with all the sides or pasta dinner/chkn parm?

I'll eat at your house!

My partner just got back from food shopping but I only planned ahead for two dishes:

Tonight for an appetizer we'll have nasturtium flowers stuffed with almond cheeze. Then I'm going to saute some chinese cabbage I grew in the garden along with onions and have it on whole wheat linguine with more almond cheeze. We'll also have apple sage field roast sausages.

Tomorrow or the next day I'll make creole stuffed peppers from vcon. Probably a double batch, since I have tons of peppers. I'll probably stuff some of the smaller sweet peppers I grew with more almond cheeze too.

This week is all about using up the garden produce we had to pick since last week there was frost.

Today I made: biscuits, steamed an artichoke, made lemon vinaigrette and salad, and the herb scalloped potatoes in Vcon

Ideas for rest of week +

asparagus bean quiche in vcon
mushroom gravy with something
pumpkin soup
red bean and artichoke stew
hummus quesadillas maybe with a flavored hummus
pesto pizza
daiya and veg pizza
bean tacos
spinach salad with pom seeds
cauliflower with spicy vinaigrette
and maybe Latin shredded seitan

So my meal cycle runs from Wednesday to Wednesday, making Sunday right in the middle! And this past Wednesday, I didn't go to the farmer's market (everyone in my family was sick) which threw everything off. So we're kinda scrambling this week.

Tonight we're having Arroz con Soy Curls (the VV Arroz con Seitan with soy curls instead!).

Tomorrow and Tuesday ideas:
- We're going to have roasted squash and tofu with some sort of side (wild rice? kale? BOTH?) because I have just a shiitake ton of squash right now.
- We also have two small eggplants that need to get used, that will probably become some form of eggplant jam for bread. Maybe I'll save them til Wednesday and get two more and we'll do that and bread and wine for dinner, mmm.
- Probably cheezy noodles with spinach and/or peas and/or whatever other misc veg I have in the fridge and soy curls.

Next meal cycle needs to be a good one because I have friends coming to visit who I almost never get to cook for! I need to figure out what they don't eat (one of them is not at all an adventurous eater, so we gotta start slow with him, and the other one is an adventurous eater but there's something basic she doesn't eat... maybe bell peppers? or... onions?) so I can plan.

Today is my Monday, so yesterday I made VCon Tarragon lentil soup, and some quinoa. I then prepped a bunch of random veggies, and made mini-muffins for breakfast for the week. I am eating lentil soup even now. Happy Monday!

I'm not sure what day I'll make each, but this week I plan to make, baked pumpkin pasta with cashew ricotta and sage crumb topping, autumn latkes, and spinach-stuffing balls.

I actually planned meals and did grocery shopping for the week like a real responsible adult! So I can partake for once.

Last night (which was Sunday here) I made a basil and tofu ricotta lasagne with roasted garlic bread. Tonight I'm probably going to make tofu jalfrezi with rice. Other plans for the week are tomato kholombo (an Indian smoky tomato and lentil dish), pad thai, lemon risotto with spinach and pistachios, homemade pizzas (I'm going to attempt tandoori vegetables and raita for mine), and some kind of mystery meal that the boyfriend will make at the last minute while I'm at ukulele class on Wednesday night.

This is a good exercise for me. I'm so bad for meal planning, but this made me think about what I'll make.
Probably, butternut squash soup, tempeh/potato stew, easy burrito night, polenta with bean sauce, rice & steamed veggies with miso sauce. One or two of these will do for a couple of meals, and all meals come with some kind of salad which I improvise depending what I've picked up at the market, and steamed veggies. We also roast a bag of potatoes to keep on hand for easy go to lunches & snacks.

I should have a eat-out.of-the-freezer-week (for example, I found three different kinds of mac & cheeze in there. Hmmm...), but there are so many things I want to make! Like:

VB omelets
VB banana flapjacks
Coconut-peanut sauce with bulgur/pasta
Pizza with Cheezly and hot chorizo (might make it on thursday, it's my birthday after all)
VWAV curried split pea soup
Quinoa/bulgur salad with pesto and peanut butter hummus
Seitan ribs
Tikka masala
TVP meatballs with mashed potatoes and gravy

Etc, etc.

Yesterday, I made a kasha mushroom pilaf with dill (recipe is from Isa's upcoming book Appetite For Reduction) and some grilled tempeh to go with that and steamed broccoli. Have enough leftovers left for three more meals.

Today, I'll make an arribatta sauce for pasta and also some lemon-herb tofu to go with that enough for four meals of that.

Then, I'll just cook from my pantry for more meals later this week as I won't be hitting a grocery store this weekend, but the above should see me through till around Wednesday.

I made some bean dishes this morning to get me through another hellish week at work:
Kale and cannelini soup
Italian Rice and beans
Coucous salad with chickpeas, carrots, raisins and sunflower seeds (I improvised a recipe out of Color Me Vegan with what I had on hand)

Other than that, I am afraid it's going to be Gardein, PB&J, and maybe some whole wheat pasta. One more month of long hours at the office and I should be able to get back to a routine.

For this week I've got planned:
Potato and Greens Soup with Tapenade Crostini
Stuffed Shells with broccoli
Polenta Rancheros and Avocado Potato Salad (both from Vegan Brunch)
Pan Fried Tofu with rice with veg
Tacos with pan fried Terry's red seitan and refried beans
There will be a eat of the fridge/leftover night in there as well.

I should really start making meal plans, but since I am typically only cooking for myself, I eat a lot of leftovers during the week. I am making soup though today - the stock is currently being made and I am thawing some white beans.
I have 1/2 a package of smoky maple tempeh bacon to use, as well as 1/2 a bunch of kale (likely will end up in the soup), a large bowl of guac, and about 1/2 a container of mixed salad greens. There are also a couple of peppers, a zucchini, a giant sweet potato, yellow onions, carrots, beets, and a shitake load of apples that have to be used up.

here's what we're having!

monday: daiya, italian-style seitan, pineapple and jalapeno pizza; breadsticks with marinara and ranch dipping sauces.
tuesday: field roast marsala and linguine.
wednesday: bbq seitan ribs, potato salad and baked beans.
thursday: cheesy pea pasta with broccoli or baked ziti.
friday: birthday dinner for a friend!

OMG - just made my first PPK recipe - the butternut squash & rancheros sauce. To die for! We are slowly introducing intentional vegan meals into our already vegetarian food plan.

My mods: used hot green chilies instead of jalapenos
used canned fire roasted tomatoes instead of tomato sauce

Served over Black Forbidden Rice - still making yummy sounds.

I really, *Really* appreciate a well-written recipe. Thank you!

I make a massive batch of food at the beginning of the week & do leftovers until I cook again. It's not half as bad as it sounds. This week I made steamed asparagus, quinoa, tofu scallops, sweet potato fries & ricemallow crispie treats.

I love posting my Sunday cookins' so here I go:

I had some carrots to use up so I made Herbed Carrot Soup from Jae Steele's Ripe from around here - it's delicious! I made only a half recipe because I only had 1 lb carrots and 1 large-ish sweet potato, enough to bolster three lunches (I'll have them with toast with EB, avocado and marmite - the soup to add some more food and nutrition).

I'm just heating up the last of my black bean feijoada and savory orange rice for a very late lunch.

Later, I'll be making the carmelized onions, lentils and rice dish from VCON. I already made the spiced pitas Friday night to go with so all I have to do is carmelize the onions, make the spiced rice and lentils and braise my kale. With leftovers for dinner through the week (I make this ALL THE TIME and love it, especially with du puy green lentils. It reheats well.)

Another delicious week ahead!

I like this thread, because I don't think I plan enough. I'm eating a diet suggested by my acupuncturist, and want to go heavy on the soups, as well as finishing up some of the things I have in my fridge.

For Monday I'd like to finish the leftover rice I have by making Dianne Berg's Avgolemono soup (divine!). I'm also going to roast butternut squash, mushrooms and garlic to toss into wraps with leftover blackeyed peas.

For Tuesday, I'm going out for lunch and dinner.

Wednesday, I'm going to be making artichoke soup. Artichokes are very cleansing for the liver apparently.

Thursday, I'm making detoxifying adzuki bean soup. Ginger is good for your kidneys and I am supposed to eat adzukis but have no idea how to prepare them. http://susanciminelli.com/blog/2010/05/ ... up-recipe/

Friday, steamed greens and leftover roasted veggies.

Breakfasts are always either oatmeal or smoothies. And lunch is leftovers.

I'll be eating a mix up of the Veggie Potpie Stew with sweet potato biscuits from AFR, spaghetti and wheatballs, and possibly lentil soup this week. I tend to make a large batch of two recipes on Sundays and rotate them between lunch and dinners for the week, so not a lot of variation because I'm the only vegan in the house.
