This week I am mostly eating from vegan slow cooking for two or just for you (I'm going to be using the leftovers from dinner for lunch the next day)
Today I am having Carrot Cake Rice Pudding & Italian Seitan Coins with Mashed Cauliflower & Gravy
Monday: Italian Seitan and Pepper Stew
Tuesday: Cheezy Butternut Squash Macaroni
Wednesday: Tomatillo & White Bean Chili (made with tomatoes as I can't get tomatillos)
Thursday: Mashed Indian Veggie Sandwich

Isa's Penne Vodka, Chickpea cutlets, tvp chili ... all to be served with lot of undressed greenery ...

I made tacos tonight and have an enormous amount of Spanish rice left over. Definitely enough for another meal. What would you do with it? I'm cooking for 9 and 11 year old omnis (though obvs vegan when I'm cooking).

Alin - use that rice in burrito bowls! add some black beans and sauteed veggies or whatever sounds good.

Today I made a huge batch of chili and also the bistro broccoli chowder from AFR. I'm so happy with the amount of delicious food in my freezer right now.

monday: firehouse chile from one dish vegan w/ baked sweet potatoes and sriracha aioli
tuesday: gardein stir fry with basmati
thursday: gardein schezwan bits with bbq sauce & steamed broccoli over mashed potatoes

everything else is my usual like midweek bbq plate and friday nachos...gardein was on sale this week & the bf loves it so why not give myself a mini break esp. since i feel like crepe.

- Chili and salad
- Burrito dogs and salad
- Paella style orzo and veggies from the new Vegetarian Times issue

A couple of recipes from American Vegan Kitchen:

Country Skillet (has taters, tofu and sausages)
The Paninis but I don't have soycurls so using chick peas
Veg Quinoa Stew from La Dolce vegan to go with the paninis.

I need a dessert for treats. Prolly the gigantoid peanut butter cookies from VwaV made not gigantic (I think I usually make three dozen from that recipe of much smaller cookies).

So far today I've made two loaves of whole wheat bread (one of which will become banana bread pudding), chickpea salad with mint and sun dried tomatoes (to be eaten with mixed greens), roasted vegetables, and baked black rice.

That wipes out my produce, so I don't know what else I'll be eating this week! I might cook more chickpeas and do something with canned tomatoes.

For dinners:
AFR creamy mushroom fettuccine
VV red posole
AFR fusilli primavera
VEW sesame wow greens with tofu and fresh ramen noodles that need using.

I love when the weather turns, it so puts me in a cooking mood. Yesterday I prepped for lunches during the week as well: VEW kale and pomegranate salad, AFR potato spinach curry, and Meatless' roasted tabbouleh salad.

This week -

Sunday (last night), pierogi from vegan brunch + tofurkey kielbasa
Monday, the glam chowder Isa just put up on the blog!
Tuesday, unfried rice from afr, roasted broccoli and frozen trader joe's veg dumplings
Wednesday, curry laska from afr
Thursday, eggplant provencal from afr w/polenta


clearly an all Isa all the time week! I also made the best pumpkin muffins from the blog yesterday to have for the week. so good.

Sunday: French onion soup with grilled cheese-tofurkey sandwich on ciabatta.
Monday: Leftover soup, gardein chikn sliders, and steamed green beans
Tuesday: baked tofu nuggets, roasted fingerlings, steamed greens
Wednesday: Taco salad with romaine, sweet peppers, jalepenos, crumbles, corn, onion, salsa, ranch, tortilla chips
Thursday: Homemade pho soup with rice noodles, broc, snow peas, bean sprouts, tofu
Friday: VEDGE! I can't wait!

I've made enough food for 2 weeks today (work always gets busy around November 5th so I don't have to worry too much about cooking):
This week:
Monday: Chickpea Puree with Spicy Onion Topping, Basil & Sundried Tomato Scones, Brown Lentil Bake, Chickpea Stew (All from Rose Elliots Vegan Feast)
Tuesday: Chickpea Puree with Spicy Onion Topping, Basil & Sundried Tomato Scones, Quiche (All from Rose Elliots Vegan Feast)
Wednesday: Chickpea Stew, Colcannon (All from Rose Elliots Vegan Feast)
Thursday: Bean Goulash From Mouthwatering Vegan.
Friday: Bouillabaisse (Vegan fish cake + herbs + tin of tomatoes)

Following Week - All from Vegan for the Holidays:
Monday: Almond Winter Chowder
Tuesday: Groundnut Stew
Wednesday: Mushroom-Barley Cholent
Thursday: Old World Vegetable Goulash

tuesday: sweet chili lime tofu with kale and quinoa (using veganyumyum's recipe)
wednesday: acorn squash & breaded broccoli
thursday: veggie burgers, roasted asparagus, and oven fries
friday: taco night

I've made Broccoli, Lentil and Mushroom Pot-Pie (from the Cauliflower and Mushroom Pot Pie in V'con, adapted the veggies to fit what I had in the house), Samosa-stuffed potatoes (V'con), Asian-ified Coleslaw and a big batch of hummus. I had the pie for dinner tonight and it's sooo good.

Sunday: tofu pot pie and chocolate cake to live for topped with ganache and strawberries for my dad's birthday.
Monday: taco salad with the works - peppers, jalepenos, onions, crumbles, cilantro, sour supreme, salsa over crunchy romaine and tortilla chips.
Tuesday: A nice big stir fry with brocolli, green beans, snap peas, peppers, tofu over rice
Wednesday: Trader Joe's new turkeyless roast jawn with roasted fingerling potatoes and steamed green beans
Thursday: Breakfast tacos (tentatively) with scrambled tofu, refried beans, and all the typical toppings
Friday: Out!

Boring this week, but planning realistic basic weekday dinners. I have to get through reading Isa Does It and start planning meals. Everything I've read so far sounds so good!

Had a dinner party Saturday night and made the Voluptuous Vegan succotash dish (with homemade chile sauce polenta and guacamole). Big hit with my friends who went for seconds. Excellent flavor and lots of great texture.

I had a migraine Friday though which thwarted my dinner making plans so I had to buy one of those Sweets of the Earth wildberry cheesecakes for dessert (which my friends loved as well, but I prefer to make my own dessert and was planning to make kittee's pumpkin cheezecake squares which I've made many times before but was too sick to fit it into my dinnerly ambitions and could just manage to throw together a homemade entree on Saturday).

Otherwise, leftovers this week.

I'm having all 4 of my wisdom teeth pulled on Wednesday morning, so this week's menu is basically mush. So far I am planning on pureed split pea soup, silken tofu, soy yogurt, banana smoothies, and canned pumpkin.

Today and tomorrow I'm eating all the crunchy stuff in my house! Popcorn!

This week:

Meaty Beany Chili and cornbread muffins (from Blog and IDI). Last night. was awesome
Split pea soup (random internet recipe) in the slow cooker and pigores from the freezer
Ancho Lentil tacos and Mexican rice and Cabbage slaw
Sticky Chicky Stir fry from IDI (sub soy curls) love the name heh
BBQ soy curls, baked potatoes and a corn/zucchini saute

Kinda looking forward to everything this week! Hopefully can do some more cooking this weekend too, business trip next week so it's likely to be french fries and salad with no dressing for 2.5 days :(

That carmelized onion, lentil and basmati rice dish from VCON. Love that stuff! Along with shredded Brazilian kale (from Viva Vegan) and spiced pita crisps from VCON - except I couldn't find pitas so used naan which I couldn't rip in two easily the way I can a pita so they're messy and double layered in parts and I have to cook longer but still will make a tasty, crispy accompaniement.

Using up other odds and sods from the fridge and freezer: using up the last of my veggie burgers (will eat one as a veg burger and make cajun oven fries to go with, crumble the other leftover veg burger patty and put in a dirty rice style entree), using up some leftover frozen pesto from last week's minestrone just tossing with pasta, a freshly diced tomato and some white beans to make a complete meal. Just throw together stuff like that.

Tomorrow I'm having the Green Bean Casserole Pizza from Bake and Destroy
Tuesday it Mac & Yeast from Bake and Destroy
After that its burgers for the rest of the week
