This week I'm making/have made:

The Quinoa salad with olives, roasted corn, tomatoes and candied peanuts from Viva Vegan!
A socca (chickpea flour baked flatbread) with some leftover tomatoes, basil and carmelized onions on top (to eat with the salad for lunches).

Marbled banana bread from IDI as muffins.

Roasted fennel and tomato pasta with capers (from ED&BV) and with that, some Italian marinated grilled tofu on the side from VwaV.

Wrote my shopping list last night! Excited about this week's fixings, some old faves:

That grilled tofu salad with the rice vermicelli, lime-ish chile sauce dressing and lime peanut mint gremolata from AFR. I've been craving this salad lately LIKE CRAZY.

That tempeh rotelle broccoli rabe/rapini pasta dish from Veganomicon. I have some tempeh to use up (curry tempeh which I bought by accident--I usually get soy only so it's adaptable to any dish--I hope it's not too seasoned too curry-ishly as this is more an Italian dish I'm putting it in) but I remember that recipe is pretty assertively flavored and I gotta use my curried tempeh up and I'm just not feeling like curried food this week to properly use it.

And at week's end or into next weekend, a yummy sounding pasta salad as a recipe tester and with that, prolly some Southern-fried BBQ tofu from Vegan Vittles (another craving of late).

Yum!

Tuesday - Noodle Omelet (American Vegan Kitchen) with Corn

Thursday - Red Eye Tofu (American Vegan Kitchen)
Friday - Might be beans on toast

I finally have my kitchen organized and we have a mid-week (very not vegan-friendly) work party so today I'm making a lot from Isa testing and a couple other things.

For the party: (all from testing)
-Rhubarb Crumb Cake
-Banana Ginger mini loaves
-Cucumber cups filled with tofu salad (will make those the day-of)
-Bow tie pasta salad with butter beans

-The tofu sandwich filling from Vegan al Fresco for lunch wraps
-Pinto chile seitan and seitan carnitas
-Israeli couscous tabouleh from Vegan al Fresco

Ginger-Hibiscus Drink
Earl Grey Iced Tea
Lemon Walnut Bean Paté (Leslie Cerier) with Pretzel Sticks
Chickpea Salad (using dressing from left-over Thai red chilli/lime dipping sauce)
Red Quinoa Pilaf with Edamame
Baked Tofu ( Vegandad)
Ooey-Gooey Brownies (Vegan Diner) with Chai Glaze (Bake and Destroy)

Have enough leftovers for another picnic tomorrow, but sadly no leftover brownies.

Pigeon pea and hominy salad, spinach artichoke dip, super hot stir fried veggies with tofu and konjaku noodles, tamale pie stuffed poblano peppers, dreamsicle cupcakes, AVC meltable mozzarella, sour cherry muffins. Wow, it's a big cooking week!

Sunday: Grilled vegan Romanian kebobs (also called metite) over cous cous, grilled pita, garlic sauce, sauteed broccoli rabe and corn on the cob.
Monday: Sweet and sour tofu and broccoli over rice (Vegan Yum Yum recipe)
Tuesday: Pizza with a side kale salad
Wednesday:Red beans and rice, with Tofurkey andouille sausages, collard greens
Thursday: Taco salad with beyond meat chickn and chipotle-lime ranch dressing
Friday: Out!

I couldn't get fresh mint last week so making the Vietnamese tofu noodle salad from AFR this week.

Also, a bean stew from Soy Not Oi because I have several bags with the dregs of green lentils I can use up in that.

Tortilla soup from AFR and probably some of the cheeze-and-corn Columbian arepas from VivaVegan! to go with the soupy things. I make those to order, so to speak, because arepas do not keep well and are best made fresh.

My spouse is having dental surgery on Monday, so I'm thinking it's going to end up being a week of soft or even drinkable foods: mashed potatoes, baked winter squash, bisques, miso soup with silken tofu, smoothies, puddings, ice cream, yogurt, apple sauce, etc. I'm sure I'll be chomping on the crunchiest, chewiest things I can sink my teeth into for relief from all the soft food. I'm already craving nachos and carrot sticks!

I also made a batch of Vegan Brunch bagels as I have some Daiya cheddar shreds to use up (bagel melts!).

I'm all cooked up for the week.

I will probably also make my first batch of limeade for the season (my perennial summer drink) from Viva Vegan and I have some leftover mint leaves from the vermicelli salad so I'll make mojitos with those, also using the Viva Vegan mojito recipe which my friends once called "the best mojito they've ever had".

Thursday: Ranch Salad w/ Red Potatoes & Smoky Chickpeas from IDI

I'm pretty excited 'cause this is the first time my husband & I are eating the previous night's leftovers for lunch everyday instead of making something specific for lunches every Sunday. Not only did it save a ton of time yesterday, but I feel it's going to be a revelation having something different everyday!

Apparently my CSA box is available on Wednesdays so I'm going to have to change up my food planning!

I can't wait to get it and get creative. Also I have to harvest our rhubarb at home, so I'll have to come up with ways to use tons of rhubarb. Maybe muffins.

So it's Saturday, not Sunday, but I made my meal plan this morning!

Sunday: tacos! (black beans, ground round, homemade taco sauce, all of the fixings)
Monday: mujadara (I have a huuuuge backlog of CSA onions)
Tuesday: falafel burgers (from IDI), asparagus, baked potato
Wednesday: Thai sweet potato kidney bean stew (from the Great Vegan Bean Book)
Thursday: penne with spicy eggplant

Yum!

I bought Salad Samurai for the express purpose of making a bunch of salad components to then mix for our lunches all next week, but help! I'm feeling uninspired! I will definitely be doing up a lot of different tofus (I bought four pounds straight from the "factory"!) including the following from Kip's blog if I can convince myself to go out and get expresso and tamarind, but when it comes to other components I feel more like curries and spicy noodle dishes than salad. http://www.messyvegetariancook.com/2014 ... ried-tofu/

Yesterday, I made:

The Goddess Nicoise Salad from AFR
Drunken Beans with Chorizo (Viva Vegan!/VV), yellow garlic rice and classic cabbage salad (all from VV).

Yum! I had to use up some chorizo in the freezer, hence the beans (it's a bit warm for a wintry bean dish but it's still delish).

Next week, I'll be back to fully summer salading it up.

Chickpea and basmati rice salad (with red pepper, scallions, some dressing) from One of RR's Quick Fix Vegetarian Books.
General Tso Tofu (recipe of this version adapted from a Cdn cooking show called Recipe to Riches).

Still have leftovers of chickpeas and broc with 40 garlic cloves.

Well I can only plan as far as Tuesday night since I pick up my CSA Wednesday. But here it is!

Tonight: OSG creamy vegetable curry with brown rice.
Tomorrow: Chef Chloe Mac and Cheese with tomato slice layers.
Tuesday: IDI Good Gravy Bowl

Since I got home from work this afternoon I have made and assembled the macaroni (just needs to be topped with breadcrumbs before baking), made IDI seitan, and my pots of brown rice and potatoes to mash for the good gravy bowl are on the stove right now. When the potatoes are done I will start the curry for tonight and the gravy for Tuesday. Feeling pretty productive!
