Finished my Sunday cooking a day early;

-IDI Lentil-a-roni
- 2 batches of VB Italian Sausages for:
1) Pizza Bowl (pre-made the creamy red pepper sauce)
2) Spaghetti
- Soba salad w. fried tofu, massaged kale, chickpeas, onion, peanuts & sesame-miso dressing
- IDI Lemony-Blueberry Loaf

- spaghetti night tonight (again), 'cause $1 tomato bags at the farm market. Not complaining, because eating lots of pasta + sauce makes me feel italian american.
- bulgogi seitan, korean red beans & rice, sesame spinach, avocado, radish
- pizza tempeh salad from salad samari
- kamut lentil salad - shopping from the pantry
- salad rolls because it's gonna hit 90F and I have peanut sauce from last week
- gf baked mac & cheese, southern night - ditto, pantry
Looking to make chocolate chip cookies or cherry muffins, and bean-vwg meatballs or sausages, too

Tonight will be leftovers from yesterday. Gazpacho, foccacia, marinated mushrooms, zucchini gratin, falafel, olives, etc.
Tomorrow/Tuesday will be tofu spinach scampi on quinoa from QFV and chickpea shawarma salad from the Minimalist Baker blog, in one order or another.
Wednesday/Thursday will be Minimalist Baker panko avocado tacos and QFV thai pineapple rice salad (but with mango) in one order or another, depending on how things ripen.
Friday should be the tofu sesame sandwiches with kimchi from But I Could Never Go Vegan (whatever they're called) with cucumber salad.

Tomorrow: IDI white wine risotto
Tuesday: Bryant Terry's tofu and mushroom greens curry
Wednesday: minimalist baker chickpea bolognese on zucchini and carrot noodles
Thursday: IDI Swiss chard and mushroom pasta
I don't remember what Friday was right now.

Sunday was the IDI tempeh giardino but with chickpeas instead of tempeh, on brown rice.
Yesterday was Minimalist baker creamy lemon pasta with roasted summer squash instead of asparagus.
Tonight is Gardein chipotle line crispy strips made into tacos with lime slaw, avocado and cherry tomatoes.
Tomorrow will either be beefy green been stir fry (IDI) or minimalist baker tofu chilaquiles, with Thursday being a surprise.
Friday night be a meal salad. Or Thai takeout. Or pasta with red sauce. Not sure yet.

General Tso's tofu recipe (recipe adapted from Recipe to Riches - Canadian cooking show)

To veganize it, just leave out the egg and toss the tofu cubes in cornstarch before frying. This is the General Tso version I make all the time so can vouch for it!

Also making the sundried tomato, cannellini bean and shell pasta salad from Appetite for Reduction.

In no particular order:

Chili made with squash sautée leftovers and corn chips.
Jackfruit tacos with guac from But I Could Never Go Vegan and grilled chipotle cauliflower steaks.
Freekeh stir fry from Vegan Bowls
Grilled okra and grilled BBQ seitan with potato salad or mac and cheese (depends on circumstances)
Pasta with Swiss chard and safe from Big Vegan, probably with green salad and focaccia

For breakfasts I'm having Danish Grod with Cardamom Berries from Whole Bowls with coconut milk kefir

I actually had some time to do some good prep work today and it's cooling down enough to use my oven, so I'm excited about easy dinners this week.

Monday: Thai red curry with tofu with a side of jasmine rice
Tuesday: Tacos with beans, grilled veg, and a big corn/cabbage salad
Wednesday: Leftover cabbage salad if we have enough with some protein added in (maybe crumbled tofu with chipotles in adobo)
Thursday: Pasta with arrabiata sauce (made a big batch today) with salad
Friday: Pizza night made with more of the sauce and lots of grilled veg for toppings.

I just bought Taco Cleanse since it was on sale this week so Tuesday/Wednesday might be some new, fun recipes from that book instead of my old standbys. I cooked a load of fresh pinto and black beans today but haven't seasoned them yet, so they can become anything.

My week will hopefully go something like this:

-Eggplant parm on garlic bread with steamed broccoli, kale, carrots and zucchini
-Roasted potatoes (from the farmer's market, they are so tasty when they are fresh!), seitan nuggets, corn on the cob and stewed collard greens
-Zucchini latkes over a kale salad and tzaziki sauce, maybe stuffed in a wrap. Too many veggies for my partner, so I'll likely make him some noodles and frozen meatballs.
-Tacos of a yet-to-be-determined variety, but I have soft corn shells and gorgeous purple peppers to cook with. Avocados too.
-Friday night field roast burgers with the melange of leftover frozen fries in the freezer and whatever fresh veggie that is left to cook with.

We have such a produce haul from our garden! Wow, wow. I should so foodporn it...I'm so proud.
So, lots of eggplant, tomatoes, peppers, beets and herbs.

Chipotle Chopped Salad from Chloe's Kitchen
Corn biscults from Vegan Brunch (I always make these to eat with this salad).
Red hot BLTs from Isa Does it
Spicy potato salad from La Dolce Vegan as a side to the red hot sammiches.

A batch of lemon-herb tofu slices from Vive Le Vegan! by Dreena Burton.
Scalloped potatoes (VCON) and steamed broccoli.

Chickpea ratatouille (from Vive Le Vegan, too) and brown rice or might make quinoa-millet pilaf to serve over if I have enough millet.

+Creamy Millet Corn Chowder from "Plum"
+Risotto alla Milanese from "Betty Goes Vegan"
+Pizza using jarred sauce, frozen pizza dough, daiya, and My Balls from "Sexy Vegan Cookbook" that I made a few days ago. Pantry clean-out!
+Kaaju Curry from "660 Curries"

I'm also playing around with "recipes" (more like suggestions) from my husband's family for aloo with amchoor and lemon rice. Looking at this list, I should definitely make a salad to go along with the chowder, risotto, and pizza.

-veggie dogs, salad, more corn on the cob
-pasta with sour beets, (tofu) ricotta, and poppy seeds from Whole Bowls with sautéed beet greens
-stewed tofu and potatoes in miso gravy from VWAV with brown rice and broccoli per the book's suggestion
-sautéed green beans and mushrooms from VWAV served with, uh, something.

Depending on how the week goes, there will also be chickpea piccata with chard. And something.

Breakfasts will be pear muesli from Whole Bowls topped with peaches or strawberries.

Lunches will be leftovers, and failing that, chickpea salad on toasted everything bagels.

I've never heard of amchoor before so I just looked it up. It sounds delicious! Do you have any recipes to share that use it?

It's fantastic! Very tangy. Vegan Richa has a bunch of recipes that use it: http://www.veganricha.com/?s=amchur

For my mother-in-law's aloo, I panfry cumin seeds, amchoor, ground coriander, and salt, and then toss in diced boiled potatoes. I'm working on getting the proportions right since they just eyeball it, but they're the best potatoes I've ever had.

Thanks for the info! I'll keep an eye out for it next time I'm at the Indian market.

This week is going to be:

Monday - Pasta with veg and marinara sauce
Tuesday - Hoping for jackfruit brisket from Taco Cleanse if I get to the store that sells jackfruit. Otherwise maybe the blue corn chip crusted tofu. I think I'll also make the green rice recipe and one of the salads and have it all with storebought tortillas.
Wednesday - Leftovers from Tuesday
Thursday - Potpie Stew with sweet potato biscuits from AFR
Friday - Out with friends
