Sunday was chickpea piccata with caulipots
Last night was red lentil chard soup from Quick Fix Vegan
Tonight will be kebabs using Gardein beefless tips, cilantro rice and steamed yellow beans
Tomorrow will probably be sweet potato and black bean quesadillas
Thursday will be kale salad with delicata squash from OSG
Friday will be potato leek pizza with tempeh bacon crumbles.

I need to start meal planning again because dinner times lately are fiascos. For next week:

Monday - marinated tofu, baked potatoes, green beans
Tuesday - chili in the slowcooker
Wednesday - leftovers (get home late)
Thursday - refried beans, rice, corn, chips and guac
Friday - some sort of pasta with veggies dish

For this week, I made:

Snobby Joe lentils from V'con (and Fresh hemp/flax whole wheat bread to pile them up on top of)
Sweet Potato Gnocchi and peas (I don't really follow a recipe for Gnocchi anymore)
Pierrogies (dough recipe from Vegan eats World) with a beat/cashew cream filling I came up with on the fly. There's something very homey and Eastern European about these --- I had a plate full with a drizzle of Tahini and they were SO good
Oven baked Rosemary Potato Fries.

Tonight: Greek mushroom stifado with horseradish mashed potatoes and steamed green beans from Whole Bowls
Monday: bohemian bowls with Chili squash and tahini dressing from Whole Bowls
Tuesday: deeply roasted chipotle butternut squash tacos from Taco Cleanse
Wednesday: banquet bowls with cauliflower pilaf, dhal and raita from Whole Bowls.
Thursday: healing jalapeño popper tacos from the Taco Cleanse.
Friday: pasta alla norma with Togo ricotta from Chloe's Vegan Italian Kitchen.

I made a lot of stuff as I went to a potluck yesterday:

For the potluck: Chloe's stuffed mini potatoes with salsa and guacamole from Chloe's Kitchen.
Terry's Pistachio Rosewater Semolina Date Squares from Vegan Eats World.

For my meals:

That cashew drunken noodle soup that I love and make constantly from Chloe's Kitchen. Served with avocado toast, also from Chloe.
Tempeh with Broccoli Rabe/Rapini pasta dish (an all time fave!) from Veganomicon.

Yum!

I have some leftovers I'll be eating for the next few nights, then probably gonna do more Quick Fix Vegan--that was such a good PPK Cooks challenge book! I need to figure out when the heck I can get to the grocery store. *facepalm*

Yesterday: Roasted acorn squash stuffed with rice, onions, mushrooms and nooch (inspired by Martha Stewart) with roasted brussel sprouts on the side.
Tonight: Mediterranean pasta with peas, arugula and yellow tomatoes from Whole Bowls
Tomorrow: brussel sprout fried rice with sauteed seitan from VWAV
Wednesday: fridge leftovers or leftover stew from the freezer with grilled cheeze sammiches
Thursday: mushroom tacos from Taco cleanse
Friday: Miso meal in a bowl from Whole Bowls

I hear you! I bought it just for the challenge, really (on a whim, lets be fair) and I regularly think about/crave some of the things I made that month. For me, who only does so many recipe repeats, that's kind of huge. I have been meaning to update the thread in the Cookbooks forum just to get my thoughts together on some of those things I made. (luckily I have my instagram to refer to)

Tofu scampi man. I dunno. That stuff was alright.

I'm so impressed that you guys all cook so many nights. I usually only cook 2 big meals and we have big salads or leftovers the other nights and get takeout once a week.

Yum, Padraigin, I love pumpkin. That sounds amazing!

We like to try to theme weeks for dinners (but we aren't that good at committing to it). This week is Spanish week, so:
Revolutionary Spanish Omelet from VWAV
Tapas menu from Moosewood Celebrates: stuffed mushrooms, cauliflower and green olive salad, Spanish chickpeas and patatas bravas
For lunch: Quiche Lorraine from The Vegan Boulangerie (not Spanish obviously)
Butterscotch Pudding from The Joy of Vegan Baking (also not Spanish)

My pantry, fridge, and freezer are all at max capacity (a bag of kidney beans just fell out and hit me on the head - note taken), so I'm focusing on recipes that call for what I already have, and using up what I've already made. This should keep me well fed for lunch/snacks/dinner.

+Masala chai and tofu pakoras from "Vegan Indian Cooking"

From Whole Bowls:
Black beans with butternut, black rice, and chimichurri
Peanut tofu curry
Mac and cheese with smoked tofu and baked tomatoes. Maybe with an extra side of roasted cauliflower.
Saffron, butternut, and bean stew with harissa yogurt (we had this last night)
For breakfasts, yogurt bowls with cherry pesto and toasted oats.

From The Taco Cleanse:
Tater Tot-cho Tacos with lots of lazy hacks including frozen guac, tofurky soyrizo, and probably the lazier cheese sauce
Fish tacos using gardein golden fillets instead of the tofu. I could still make the tofu but probably wont.
Comforting seitan guisada tacos with leftover rice from the tofu curry night.

This weekend I made:

The lentils and basmati rice with carmelized onions pilaf (totally comfort food for me. I love this simple dish and crave it more and more every year through fall and winter) and spiced pita crackers (Veganomicon) and just some sautéed swiss chard for some leafy green goodness on the plate.

From Quick Fix Vegetarian - the Tofu Cutlets with a caper/shallot sauce/wine/EB sauce (there's a name for these sauces but it's name escapes me at the mo') with plain white rice on the side (to soak up the deliciously saucy juices) and some plain steamed broccoli - as the sauce is so flavorful, it's good to be surrounded by blandish sides. Yum!!!

-Roasted broccoli and carrots with TJ's South African Smoke seasoning
-Oh She Glows Chickpea BBQ veggie burgers
-A tomato herb galette with the NYT gluten free buckwheat tart crust. The crust is not good.

Prepped:
-Lettuce for salads
-Sliced up eggplants to make the Eggplant Dengaku from AFR later this week, to eat in bowls with brown rice noodles, lots of scallions, the broccoli above, and edamame

The Seitan from Quick Fix Vegan (one batch to use in Italian linguine and the other to freeze).
Homestyle Potato Rolls
Tofu, Miso, Mushroom and Potato stew (an all time fave!) from VwaV
Italian Style Seitan Linguine from American Vegan Kitchen (one of my favorite pasta dishes! So yum!)

It's called a piccata sauce (or might be picatta spelling?) Also, I must recommend this dish (Tofu Breaded Panko Cutlets with lemon/caper/shallot sauce). Definitely a regular rotation dinner for me now. It really was super good.

Last night was the baked bean and sweet potato enchiladas from Oh She Glows.
Tonight was the mac and peas from Oh She Glows Everyday, with steamed wax beans on the side.
For the rest of the week:
Cheesy 6 vegetable soup from Oh She Glows Everyday (or whatever it is called)
Super lazy sloppy joes (tvp and manwich style) and corn on the cob
Caulipots, sauerkraut and tofurky kielbasa
Curry leftovers from the freezer and white rice.
