I'm usually too disorganized to plan for the entire week, but I made soup, pizza, and baked tofu last weekend and it was *such* a lifesaver last week when I was working loooong days to have them waiting for me in the fridge. I'm a new woman! Tonight I'm making four things from Vegan on the Cheap that will hopefully last the week: -Rice island casserole (and I'm thinking maybe some jerk asparagus on the side) -Tempeh bobotee -Cheapskate chutney to go with the bobotee -Black bean soup with kale & rice
I might also fire up the bread machine tomorrow and make some crusty bread to go along with the soup. Here's to an awesome week!

I'm fer sher gonna make some.chickpea cutlets to make sandwiches out of. I'm gonna try some mac and cheeziness, which I've never done vegan before, and I'm gonna get some bok choy and fresh water chesnuts to make a slightly different stir fry than what I always make. Aannddd, maybe try some seriously hot chili and that's all I can think of.

-tofu banh mi's with sriracha vegenaise and pickled carrots and daikon (yet to make but on my list from last week) -seitan carnita tacos -seitan carnita quinoa bowls with avocado and butternut queso -caulipots with tempeh & chard piccata -curry leaf...curry something from VIC -Chana masala with green chickpeas -noochy kale salad for all week sides -risotto with white balsamic chard

Did some prep work last night to make my cooking today easier (or I'll cook on the weeknights this week, because I might go downtown today and not do my usual cooking).
So anyway, last night I made the marinara from Chloe's book to prep for making the bolognese sauce. I made some brown rice and prepped kale as I'm making Joanna's kale and white beans over rice (from YRR). I'll probably finish making this tomorrow as it's a weeknight type meal. Also making the chipotle chop salad from Chloe's book probably on Monday or Tuesday.
These will make my dinners/lunches for the week. I should make some cookies or something too but I don't have much cooking time this week so might have to do without sweets.

I want to eat at jdfunks' place. That's quite the all-star dinner lineup! I think we're doing: calzones tonight the All American burgers from Best Veggie Burgers Korean BBQ with soy curls slow cooker French Onion soup a recipe from Robin Robertson's slow cooker cookbook involving black eyed peas (sort of a hoppin' John)

-chickpea cutlets with nooch gravy and roasted cauliflower (that's my fancy dinner tonight) -tofu stir fry with broccoli slaw -marinara sauce with gardein chik'n and rice pasta -Chickpea Quinoa pilaf (in V'con, I think, or might be VWAV)
Also making carrot raisin salad, kale chips, and "big salad" this week (I put together olives, chickpeas, cucumber, tomato, red peppers, parsley, lemon juice, olive oil and garlic salt and I serve it over lettuce for lunches)

This week I think we're gonna have:
Arabian Lentil/Rice Soup with ciabatta bread Kimchi-Dubu Mandu with rice and banchan Broccoli and Cauliflower with Pasta and Cheesy Sauce Tofu Scramble with tons of greens and some peppers. -One meal is undecided until we go grocery shopping, because my son gets to pick some veggies he's never tried, and we'll base our meal around that. Maybe potato-leek soup, because we looked at leeks last time. -Possibly Isa's boullabaisse with bread and rouille, if we have family over this weekend. And maybe with a fresh salad.

I've got the Vegan Diner Seitan Pot Roast in the crockpot, and the coconut curry lentils from Supermarket Vegan simmering on the stove. Also have a batch of strawberry rhubarb applesauce on the stove. Set for the next few days! I also plan the V'con quinoa chickpea pilaf this week, as well as gardein chik'n and pasta, sauteed cabbage, and some kind of calebecitas (Mexican squash) dish.

-roasted chickpea tacos with brussel sprout/red pepper slaw and fixings -chickpea cutlets with caulipots and maybe mustard sauce -roasted red pepper risotto, veganized from Carla Hall's book -leftover grit cakes or burgers -spaghetti with sauteed red pepper, chickpeas, spinach, garlic and any other vegetables around -seitan/cabbage dumplings to freeze (store-bought wrappers) are also on my to do list

I haven't completely figured it out, but Seitanic Red and White Bean Jambalaya . I predict lots of leftovers because my pot is totally full. Chickpea noodle soup. Chickpea cutlets with lemony roasted potatoes and mustard sauce with asparagus. Something with rice and broccoli.

Just made a batxh of Chik'n Mac and Trees, and a tamale pie. that'll get me through most meals and I also have a lot of salad and fruit, and my Vitamix gets here on Tuesday so I'll be having KALE SMOOTHIES! I also baked a batch of peanut butter cookies for dharma service this morning.

My plans are:
- pho - falafel with zhug and tahini sauce - spinach calzones - lazy options: tacos and/or breakfast for dinner (Wayward-style sausage biscuits)
We'll see how much of that my wicked morning (aka all day) sickness actually allows. At least all the ingredients are bought.

Yesterday, I made:
Jambalaya along with the creamy tomato dressing for a side salad to go with the Jambalaya--all from Vegan diner.
Pasta di cecci (sp?) Like pasta e fagoli but no tomato in the broth and different herbs and stuff. Really tasty! Also some NYT socca (folks posted these recipes in the rosemary thread) and these were both super simple and super yum so thanks to you guys!
Yummy scones for Isa's new book!

I'm just prepping the Tempeh Creole (Tal Ronen's recipe from Oprah's website) to serve over brown rice for dinners this week. Had some beautiful organic tomatoes that I just skinned and deseeded for the sauce.
Horseradish potato salad (from Vegan Diner) and a chickpea mash sammich filling recipe from the Toronto Veg association (I'll eat these sammiches on some olive and rosemary foccacia buns I made last weekend and stored in the freezer) for lunches this week.
Maybe make some lemon bars with my leftover Meyer lemons for desserts/treats.

split pea soup roasted cabbage with chickpeas in spicy lime dressing with rice green lentil pumpkin curry + rice roasted roots + chickpeas + tomato sauce spaghetti with lentil bolognese
I'm starting a full time job this week so feels good to be prepared.
