Cabbage vinegar salad to eat along with meals.
Carrot, dill and bean salad.

Lentil soup
Noochy pumpkin baked rigatoni
Baked cilantro rice/barley pilaf
A big pot of pinquito beans
Roasted onions and carrots

That should all last almost two weeks. Breakfast will probably be mostly chia pudding. For snacks, I'm going to try to make a dent in my frozen muffin collection.

I made a batch of Joanna's black bean and potato soup for the freezer (for quick meals)
Homestyle potato rolls from VCON (to round out soups and salad type meals)
Tofu dill sammich filling.
Tex Mex salad from AVK.

Potato rolls sound so good! I keep meaning to make some bread to freeze, but I'm too lazy to follow through. Maybe cornbread because it's considerably less effort.

I make those homestyle potato rolls more than anything else bready that I make. They are my favorite rolls and so crusty and yum. I love to have them on hand to round out a soup, especially. I hand knead the dough for a full ten minutes (I use a timer) but I don't mind kneading.

So, I still have several meals frozen from last week, but I'm cooking again today (all from the pantry - no buying food this month if I can avoid it!). So far:

Refried white beans
Baked brown rice with saffron
Lentil/artichoke salad (to be eaten with crackers, since I have somehow accumulated something stupid like 7 boxes?!)

For snacks and maybe breakfast, I will be eating lavash (pulled out of the freezer) with peanut butter.

The theme here is clearly beans and rice. I miss vegetables, but it's okay temporarily. Saving money is cool, and my pantry has gotten out of control with dry goods and needs to be eaten down.

I'm going to bake peanut butter cupcakes this afternoon to use up some leftover frosting from a cake I baked last week. And maybe something else? I'm not sure yet. Maybe breakfast cookies to use up some oats.

Tonight will be Snobby Joes, probably. Rough list for the rest of the week:

Vcon asparagus quiche
Chloe's mac and cheese
Spaghetti and spinach balls?
Some sort of stuffed peppers (black bean/quinoa maybe?)

One night will probably be gardening burgers and another tofurky sausages.

I made the VCON Lentil salad with the pita crisps from VCON to serve alongside (I always use the lemon pepper, salt and garlic seasoning for mine).
Banh Mi sammiches from VEW.
Later this week, I'm making the creamy tomato sauce with marinated tempeh cutlets from AVK.

My broken toe is still healing, so no gym for me this week :( but...gonna take advantage of extra time in the evening and make some new stuff, and more time consuming stuff

-rope vieja with slow cooker Cuban black beans and yellow garlic rice (viva vegan). Requested by my omni hunny. It's like his favorite meal, and he's been in the studio all day so it's for him :)

- Pistachio date salad from VEW. Maybe zatar pita on the side

- Mexican style Cesar salad with Tempeh asado

- New Mexico pinto bean soup (from vegetarian cooking under pressure- this soup is nomz)

- leftover rope vieja in either sopes or pupasas, (VV) and chopped Mexican salad (VEW) but with lettuce, less veggies....more salad-y.

- tor dal and green beans and potatoes. From two vegan Indian cookbooks with really similar names. One was the free amazon one!

Dinners:
-Peanut Tofu Noodle Salad
-Calzones
-Black bean enchiladas with queso sauce
-Arabian Rice and Lentil soup with Ciabatta
Snacks/Desserts/etc:
-banana bread
-macadamia ginger crunch cookies
-fruit jellies (like gummies, but made with agar)
-macaroni bites
Breakfasts:
-oatmeal/the usual
-Today we had toasted baguette with maple-hazelnut butter and caramelized bananas. So good!
-breakfast pizza on Father's Day! (Tofu scram, with lots of different veggies, some kind of sausages, and probs some Daiya)

I always cobble together my lunches. I don't know why. Probably a mix of sandwiches and leftovers.

My mom sabotaged my no-groceries plan by buying me some groceries. It was nice of her and I appreciate it, but I'm still really trying to eat down the pantry.

Today I planned to make a mung bean salad for lunches, but I waaaaay overcooked my mung beans (they cook faster than lentils! who knew!), so I ended up with mush and improvised mung bean hummus instead. That shiitake is GOOD! Next time I end up with a jar of mung beans in my cupboard, maybe they won't sit around for 3 years(!) because now I know what to do with them.

Breakfasts: Soy yogurt with fruit, cereal, and chia seeds
Lunches: Bulgur/carrot salad with mung bean hummus and spinach
Dinners: Frozen leftovers? Possibly a chickpea flour frittata, if I can bear to turn on the oven.

Ooooh, thanks for posting that. I have a bag of mung beans that I need to use up too. And I was planning on making some kind of bean dip this week anyway. I'll have to try it!

Yesterday I made:

The Creamy tomato spaghetti sauce with tempeh cutlets from AVK.
Bulgur and cannellini salad with arugula from VCON. (Yum! Never made this before and it was delish! A great salad because my least favorite grains tend to be bulgur and couscous so I always love to find stuff I love using them). Makes a lot, too. This is the kind of thing I'd bring to a potluck as it's hearty, impressive, makes a lot, and I think just about anyone would like it.

I...don't recall seeing this recipe in Vcon! That is one of those books I keep finding new recipes in.

I am doing some events next week, and need to bring a lunch with me that does not need refrigeration, but will be in an air conditioned room. Grain and bean salads are PERFECT. I will have to check this one out.

Totally! And because I was a tester I feel like I know the book well and even I have found some new stuff to try. The Bulgur, Arugula and Cannellini salad is on the same page as the Lentil Salad (don't have the book in front of me).

I also found some other stuff to try--like the butternut rice paper wraps with corn and edamame salad (when looking for summery things to try).

-Thai coconut curry with rice, lots of potatoes, and tofu
-Peanut Noodle Salad Bowls (extra salad for me, extra noodles for the salad-haters)
-Macaroni'n'Nooch
-Pizza Night - toppings to be decided
-some kind of tapas night, with homemade bread, roasted carrots (or roasted carrot dip with veggies to dip), etc

Between Julialegume and myself, we hit three farmers markets in the past few days, so this is what's on the menu this week:
-fresh fava beans
-green lettuce
-kale > going into this morning's tacos
-garlic tops
-fresh garlic
-broccoli
-red beets
-picklings cukes
-carrots (already pickled with the little cukes and garlic scapes)
-asparagus
-choi
-fresh basil
-fresh dill (ditto for pickles)
-zucchini > in this morning's breakfast tacos with potatoes
-new potatoes
