Is it weird that I look forward to planning my menu and making my shopping list for the week??! Here's my week, all from AFR, yum:
Monday: Chipotle lentil burgers with onion rings Tuesday: Up-side down lentil shephards pie Wednesday: Eggplant chickpea curry with cranberry cashew biryani Thursday: Veggie pot pie stew with sweet potato drop biscuits Friday: Probably eating out at Spiral Diner if I'm lucky (mmmm Mitch sandwich, chocolate and salted caramel ice cream - my usual)

week 11 of the cookbook challenge... so excited for brunch!
Monday- going out Tuesday- red flannel hash Wednesday- peanut butter waffles Thursday- tempeh something (haven't decided what) Friday- beer battered tofu (i have high hopes for this!)

I love planning menus and grocery shopping, too! I do have to control myself though or I spend way too much money. Here is our menu for the week:
Monday - pot pie stew with sweet potato biscuits (AFR)
Tuesday - buffalo tempeh (AFR), mashed potatoes, 40 clove chickpeas and broccoli (AFR)
Wednesday - mango bbq beans (AFR), cornbread
I go food shopping on Thursdays so only have these 3 days planned so far. Just as an aside, I only post what I am eating because the rest of the family is omni. This week, though, everyone is eating the veg meal on Monday and Wednesday!!!! I have convinced hubby that, in order to save money and pay off our debt so he can retire early, we need to eat more veg meals and he said ok! They already love chickpea piccata and upside down lentil shepherd's pie so I hope they like the pot pie stew and the mango beans.

Yesterday was tacos. Today will be Indain: lemon rasam, some sort of sambar, maybe a cucumber salad or cooked spinach dish, and of course rice.

Lunches: AFR trattoria pasta salad Dinner 1: southwest sunshine burgers, baked potato with uncheese cookbook gee whiz spread & dill steamed baby carrots Dinner 2: AFR red wine & kalamata tempeh + broccoli polenta
(that's dinner for 4 nights since each meal makes 4 servings but i'm cooking for 2)

I'm going to my friends for the afternoon and evening tomorrow so I've done my Sunday cooking Friday and Saturday night this week. I made:
Arroz con seitan and Salvadoran marinated slaw to go with that. Seitan potato chipotle tacos to eat through the week.
I also have some lentil quinoa stew I made last Thursday in the freezer in case I run out of stuff before I have time to cook again. I was planning on making a split pea and veg soup to freeze for more quick meals but I'm not sure I'll have time before tomorrow is out.
I also have Buttery alfajores (my favorite cookies) I made a batch of those last night. They get a bit messy but they do freeze well and I don't care if the caramel runs a bit, I lick it all up, I love those cookies so much.

sushi salad pasta w lentil sauce sping rolls and rice fried rice chickpea burgers and potatoes roasted root veggies and chickpea stew.
Not the most exciting one, but one that combined all the ingredients in my house since I'm moving away from Iceland this week.

I love this thread! I'm such a meal-planning dork. Probably because our local grocery store has online shopping w/ free pickup, so I can be a complete lazy asparagus and still get all my grocery shopping done.
Sunday: buffalo tempeh (AFR) wraps with broccoli slaw Monday: black bean cornbread pie with guac Tuesday: takeout night (husband teaches late); sesame tofu and spring rolls from nearby Chinese place Wednesday: fettuccine & asparagus in lemon cream sauce (from The Vegan Girl's Guide to Life) Thursday: Hawaiian tofu pizza Friday: Philly seitan sliders (Vegan Diner)
Desserts this week: mocha java cake (Vegan Diner) and mexican hot chocolate pudding (random NYT recipe)

I was inspired by current CookBook Challenge but I was too lazy to participate. However I decided too cook each week from different cookbook that I have. And for this week I choose "Vegetarian Basic" by Cornelia Schinharl. It's Germna vegetarian cookbook and diary is present in almost every recipe. I choose ginger and lime risotto (easy to veganize, I will omit parmesan and change butter for olive oil) and home made pizza wit artichokes and roasted zucchini but instead of ricotta I'm going to use mixed tofu with cashews (simplified tofu ricotta from VwaV). Also I'm planning to make hot red lentil spread and eggplant spread with olives, capers and sun dried tomatoes.

I haven't totally figured it out yet, but I'm making butternut rice, blackened tofu, and jerk asparagus from AfR for tonight, and I'll have leftovers of that tomorrow and probably Tuesday. Wednesday and Thursday, I'm thinking something Indian. Friday, maybe burritos?

Tonight: Quickie black bean "chili" with brown rice. Monday: Making my own veggie broth and having a quick stir-fry with Unfried Fried Rice from AFR. Tuesday: Lentil soup w veg, probably loosely following the AFR Lotsa Veggie Lentil Soup recipe. Wednesday: Leftover lentil soup, which I'm hoping will thicken so that... Thursday: Lentil Shepherd's pie from AFR (can you tell I'm inspired by this book?) Friday: Depending on the success or failure of Thursday's dish, probably leftovers or breakfast for dinner with a first attempt at tofu scramble with garlic, onions and spinach!

Tonight: roastingly hot and spicy Asian noodles (partner's request) and miso soup. Tofu will go in one of them. Other meals for later in the week: Ethiopian, mac and 'shews, v'con tomato rice and navy been soup with roasted garlic, probably something from VV.

Monday: pasta with either red sauce or the mushroom sauce from AFR, green beans and garlic bread (I have leftover red sauce from the freezer and will make the mushroom sauce and offer a choice - there are some mushroom haters in the house)
Tuesday: black bean tacos and Mexican rice
Wednesday: chickpea and broccoli casserole from VWAV, roasted carrots, homemade rolls
Thursday: buffalo "chik'n", mashed potatoes, cole slaw
Friday: possibly leftovers or sandwiches of some type

Caldo Verde with Tempeh (AFR) Mango Beans (AFR), cornbread and salad Bengun Bharta, Tofu with Spinach (Indian Home Cooking) and basmati rice "Beef" and Brocolli (Complete Guide to Vegan Food Subs) with brown rice
We had the Caldo Verde last night and it was delicious.

i only have one night available for cooking this week (sadness!), but tuesday night i'm going to make polenta rancheros from VB with some roasted turnips and beets. yum!
oh wait, i just remembered i have saturday night off. yay! i have no idea what to make!

I'm making a pea soup recipe from La Dolce Vegan. Tofu Dill Sammiches from VwaV Black eyed pea and potato soup from YRR Homestyle potato rolls from VCON.
All should feed me through the week.

Last week was a bust. Didn't make a single thing on my list.
I'm just shooting for the Vegetarian Times Saag Paneer Tofu (I don't know why they couldn't just call it Saag Tofu since there is no cheese in it!). Maybe I'll try that homemade veggie broth.

- yellow rice, venezuelan black beans, and shredded seitan (all from Viva Vegan) - spinach lasagna with tofu ricotta and AFR's edamame pesto - italian tofu, roasted asparagus, mashed potatoes - dill-basmati rice with chard & chickpeas (V'con) - chili cornmeal crusted tofu with broccoli and cool slaw - cold udon noodles with peanut sauce and seitan (from VWAV) (except I'm using soba because the store was out of udon)
