This week I'm cooking a bunch of recipes from Thug Kitchen:

Buffalo Falafel + oven fries
Peanut Tempeh Summer Rolls + orange broccoli + brown rice
Veggie Burger + corn on the cob
Tucson Tempeh Pasta
Black Bean, Corn, and Red Pepper Salad with Lime Vinaigrette (this one is from Serious Eats)
and a clean-out-the-fridge one-pot couscous and veggie deal at the end of the week to use whatever's left

We had a pretty stellar trip to the farmers market this morning (http://instagram.com/p/cUrrW3NKEV/ !) and it's going to be a very colorful week ahead. Some ideas I have from looking at the haul:

- sesame tofu stuffed 'fried' squash blossoms with dipping sauce and garlic/tahini/noochy kale (tonight)
- carrot chickpea noodle soup
- Thai jungle curry with jasmine rice, which we bought a 25 lb bag of today
- some type of more Indian-spiced curry with jalapeno, chickpeas, potatoes & tomatoes
- cornmeal coated tempeh and fried rice
- farro risotto using whatever veggies are remaining, which I've been meaning to make forevs

I already made kosher pickles today for the first time ever, so BLTs may be in order...

some of the things from the mix this upcoming week:

organic baby green salad with balsamic tofu, tomatoes, zucchini with garlic bread
meatballs with sauce served with french fries and a side salad...inspired by DDD on Food Network...

The rest of the week is more of my usual stuff....nachos, stir fry, bbq soy curls...

This week I will be making Isa's Penne Vodka, Pasta Con Broccoli, Arabian Lentil & Rice Soup along with my usual roasted bell peppers with tomatoes, onion, garlic ... all to be serves with lots of greenery ... I have been eating pea shoots by the fistful lately ...

Long weekend in Canada. Woot! This weekend I'm making:

Sauteed seitan with mushrooms and red wine (over mashed potatoes and served with some green--likely broccoli or asparagus). I really don't like seitan enough to make it a central theme of my food much but I'll give this one a shot with Terry's red seitan from Viva Vegan! which is my fave beefy seitan.

The Teany cookbook middle Eastern plate which consists of: A yummy version of quinoa tabbouleh, a lentil salad with almonds, roasted red pepper hummus and toasted pitas. This is one of my favorite feasts especially in the summer.

Today, I still have to make the black bean and sweet potato salad from Dreena's book. Was too busy earlier this week to get that one made.

Making some recipes from Quick Fix Vegan by Robin Robertson. Yesterday I made:

The Vegetable, bean and quinoa soup (seems tasty but I have yet to eat a bowl--I just stored most of it in the freezer for future meals).

The chickpea patties/curried sandwiches - Can't remember the proper recipe title for this one but it's in the sandwiches section. This was prep ahead, I haven't actually eaten a sammich yet, just prepared the chickpea patties so the sandwiches are ready to go and they seemed tasty. The dressing is a combo of mayonnaise and mango chutney. The patties called for 2 tbsp of curry powder and while I worried that might be too much, I put the whole quantity in and the chickpea patties are not overwhelmingly curry-spiced (to me, anyway) though I worried they would be.

Also making the vegetable and tofu stirfry from this book later this week. Seems like a basic stir fry--but I love a good stir fry from time to time.

This week our menu is the following:
*Deluxe Tofu Vegetable Mafe (VEW) with Okra served over brown rice
*Kale, mushroom, and Italian Field Roast tossed with pasta and olives
*Jamaican Curried Seitan Patties (VEW) served with Salad
*Crispy Tofu Tacos served with cabbage salad
*Edamame, Lemon, and Roasted Red Pepper Risotto (VCON) served with salad
Lunches consist of yummy leftovers. It's going to be sad when school starts again...

Those Chickpea Curry Patties (whatever they are) are very good. Especially with the chutney/mayo combo. I forgot about those, need to make them again soon! they freeze really well.

I have had a really super busy last couple of weeks working and have not had any time in the kitchen, or so tired when i come home I stuff my face with taco bell at 10pm. I was hoping I would WANT to cook more, but I am still tired and meh and uninspired :( Usually I do at least one new recipe a week, but this week I just wanted fast stuff I was familiar with.

Here is my week:

Sunday: BBQ soy curls (used bottled Jack Daniel's sauce) and a corn and zucchini tomato saute thingy I make. It was yum. Oh and hot carrots, first time making them, it was fun and easy

Monday: Millet and Peanut Mango Salad from VEW. Then some leftover hummus and packaged Naan bread. I found my local Sprouts (regional awesome chain grocery) has their own brand of Naan which is VEGAN (says it right on the package) and is semi cheap. My new favorite bread.

Rest of week:
Pad Thai. My tofu better not be bad right out of the package AGAIN or I will get stabby.
Cesear Chavez salad and Tempeh. Might do buffalo style instead from the blog. Or go mexican. Dunno.
Red Lentil and Chard Soup from Quick Fix Vegan
Soy Curl Fajita style tacos with refried beans. Maybe Mexican Millet. Depends on how lazy I feel.

Yeah, they're actually really awesome and I'm really enjoying them. I was a little short on chutney but that mixture is still really good (chutney/mayo) even though I don't have quite the right proportions. Still totally yum and easy to make. I have roti bread, too. I totally believe the patties would freeze well.

I have the vegetable soup from the same book for dinner today (with quinoa and beans). It's a simple vegetable soup but with lots of veg and healthy and seems yum!

This week school officially starts! Last year I made a terrible habit of skipping lunch and chugging tea and my body (and mind) paid dearly for it. It was awful. I'm trying (again) to make eating a priority and stop letting other stuff get in the way, because when I do everything goes to hell. As a teacher, you don't want to be starving and grumpy with middle schoolers during the last few lessons of the day!

Here's what I'm thinking for this week's breakfasts, lunches, snacks, and dinners. I'm trying to have options for lunches and snacks so in case I stay late at work one day, I won't fall into the takeout trap after work. Also, I'm not eating all of that for breakfast. I may choose one or two of those things each morning.

Sunday
D: Curry Laksa from VEW

Monday
B: Smoothie / meusli / lentil-quinoa mush (Tofulish breakfast)
L/S: ?
D: Leftover Laksa (need to cook more rice noodles)

Tuesday
B: Smoothie / meusli / lentil-quinoa mush
L/S: blackened seitan chicken (from Vegan Sandwiches) salad with ranch or caesar, banana/fruit, PB&J, yogurt, slice of fritatta (tofu scramble + socca)
D: Taco Night - taco meat (TVP, beans, corn, tomatoes, zucchini, mushroom), cashew crema, cabbage slaw, pickled red onions, guacamole

Wednesday
B: Smoothie / meusli / lentil-quinoa mush
L/S: blackened seitan chicken salad with ranch or caesar, banana/fruit, PB&J, yogurt, slice of fritatta
D: Mac & Trees & Kale if I can find it (sauce is cashew chipotle recipe from ppk with roasted red pepper substitution)

-fried mac and cheese balls (from that new destroy blog cookbook)
-another thai curry since I just bought more lemongrass and galangal over jasmine rice
-no knead bagels (my mixer broke but I am missing homemade bagels so)

...but really, my girlfriend just brought home massive zucchinis to add to our pre-existing pile of last week's pattypan squashes I'm still trying to cook through, so, everything summer squash. I've really been into roasting it, so more of that.
I also have pineapple upside down mini cakes, fig balsamic tarts, quick-pickled fruit and fine-tuning my spicy new dill pickle recipe (bringing down the salt a bit) on my to do list for an upcoming supper club. So, getting on that.
