Sunday: butternut squash sweet potato soup, gf veggie baked ziti with a basil cashew cream.
Monday: my guy makes the best chilli ever, I'll make the cornbread.
Tuesday: red lentil Channa dal Jasmine rice soup with rava dosas.
Wednesday: buttermilk biscuits, bbq seitan, cabbage slaw, steamed veggie
Thursday: lemongrass chilli tofu with veggie stir fr y
Friday: out!

In addition to my other stuff, I also wound up making a batch of Vegan Brunch bagels and a vat of red seitan from Viva Vegan as well (for the freezer for use in future meals).

Guys, I'm getting back into this cooking/meal planning thing! I have very little time most days to cook, so I'm back to utilizing my free days to prep and fill my fridge and freezer. This week I'm lucky enough to have two free days in a row, so I'm taking advantage!

For breakfasts I made some Muffin Tin Mini Omelets (from IDI), but I baked them in my jumbo muffin tin to put in English muffins with fauxsage and arugula for sammiches. Yum. I also already have two loaves of struan bread in the freezer (which I made last week) for toast.

For lunches I made two loaves of sandwich bread today (one went into the freezer) and tomorrow I'm going to make the Gobbler Slices from Vegan Sandwiches (mostly for poopieboy). For me I'm making a batch of the Red Hot BLTs from IDI. Plus the usual salad/fruit/etc.

For dinners I've got planned:
Sweet Potato Gnocchi with Seared Brussels in Tarragon Cream from IDI (using store-bought gnocchi)
Butternut Alfredo from IDI (gonna freeze the extra sauce!)
Cheddary Broccoli Soup from IDI with French bread (which I'll make the day of, as long as I can remember to start the pre-ferment the night before)
Bistro Beet Burgers from IDI (I made a batch of 12 today, plus I made 12 burger buns, all for the freezer)
BBQ sausages with peppers and rice (making a double batch of sausages tomorrow while I'm steaming the Gobbler loaf, putting the extras in -you guessed it!- the freezer)
Pizza (I made the dough for 6 mini pizzas tonight, gonna par-bake tomorrow, top and freeze them for a night when I need lazy frozen pizzas)

Today I also made a big batch of crumble mix for the fridge, which I can just throw on top of some frozen fruit and pop in the oven for easy desserts. Tomorrow I will make some Rosemary Chocolate Chip Cookie dough (from IDI) to put in the freezer in case of a cookie emergency, plus I already have two loaves of marbled banana bread in the freezer, and I'll make a batch of anpan to freeze tomorrow too. And I think I'll make the Sugar & Spice Pineapple Upside Down Cake (from IDI) one night this week if I have time.

All of this should last us probably until Thanksgiving. Woo cooking!

I'm going for a full Isa Does It week since I just got the book. Sunday I made the Lentil-a-Roni and portioned out two servings for lunches.

Monday we're having Potato Leek Soup and at least one portion will go for lunch this week.

Tuesday we're having Caesar salad with the tempeh. I'm hoping it will be a meal on its own, but we might have some bread or soup alongside it.

Wednesday night I'm making the Porcini Tofu burgers, which will also make a few leftovers.

I'm going out of town on Thursday, but my partner should be set for a big meal of leftovers Thursday night!

Last night was leftover lentil soup. Tonight I am going to attempt a tuna casserole with tvp hydrated with a kombu broth.

Tuesday is a late night so it will be leftovers and "fend for yourself" meals.

Wednesday, maybe vegan diner chili. Thursday probably refried beans and Mexican rice burritos, if I can scrounge up some tortillas. Leftovers from that on Friday, most likely.

I also have to make some finger foods for a friend's cocktail party Saturday. Have to pick a couple easy, omni friendly things.

I am using the magic loaf studio to finish off the leftover blackeyed peas, celery and zucchini in my fridge! Gonna serve it with VWAV miso gravy!

I think with the run-up to Thanksgiving (where we are seeing friends), we're going to be eating simply (soups (mushroom cream and garlic cream) and salad), though I do have friends coming over on Tuesday for the leek and bean cassoulet on Tuesday (OMG! so good!).

I roasted three butternut squashes tonight and will be using the pulp throughout the week if I can just avoid eating it warm out of a bowl with margarine and salt.

Sunday - ate linguini with leftover Caesar dressing from IDI. It was great mixed with steamed broccoli and sautéed spinach.

Monday - butternut bisque from IDI (leftovers will be used for lunches this week)

Tuesday - pizzas

Wednesday - butternut Alfredo from IDI

Thursday - ancho lentil tacos from IDI with cashew cream and homemade guacamole

Friday - leftovers probably

i'm so impressed that you guys can plan your food so far ahead. i usually make one big thing on sunday for dinner and a few lunches, but then i end up cooking dinner 3 or 4 other nights, too. i guess part of it is that we don't have a car, so we can't do a big grocery shopping. we just buy food for one or two days.

tonight I made stuffed cabbage for the first time with lentil mushroom and rice filling.

I have two half large jars filled with black and navy beans I made over a week ago, so that'll be my focus the next few days.
I'm thinking:
- Black bean & chipotle soup, using this as a base: http://www.bonappetit.com/recipe/black- ... ngredients
OR
- Smoked black bean sausages with greens over grits (we're on a grits kick at my apartment)
- Pasta e fagioli with navy beans
- Spaghetti & baked beanballs with either bean
- Bowls with quinoa/amaranth mix, chard, seitan & leftover AVC nacho sauce

And going against everything I have at home, I've been feeling a Szechuan kick coming on.

Lunch this week is home made cheese (a variation on the Great Smokey Mountain Cheese from Vegan Diner (made without the paprikas, but with white miso & fake bacon piece mixed in)).

Dinner this week from Everything Vegan Slow Cooker:
Tonight: Seitan Pot Pie
Monday: Portabello Barley
Tuesday: Chana Masala
Wednesday: Shredded "Chicken" Chili
Thursday: Tomato Pasta with fake bacon cheese mixed in (not from EVSC)
Friday: Frys original burger with fake bacon cheese

I just made a few basic things to combine throughout the week in salads/bowls:

Baked black rice with mushrooms
Baked marinated tofu cubes
Roasted carrots
A big pot of chickpeas

Breakfast: pumpkin tofu pudding, and maybe banana rice pudding later in the week

Snacks: granola and possibly some crackers or quickbread

Food that's not bowls from frozen food (likely to be dinners often): Last night I made chickpea cutlets, sauteed chard with the chickpeas left over from the can for chickpea cutlets and sweet potato fries. I have leftovers that I had for lunch.
Tonight: Fresh baked bread and the brussel sprout & sweet potato chili from AFR which I'll use for lunches. Otherwise, it'll be barley, red lentils with brussel sprouts and kale and maybe some extra sweet potatoes.

You guys, I just discovered this and am in heaven! I always plan my weekly meals, but we fall into such a serious rut (I'd blame the newly picky child, but it's been an ongoing problem).

I can't remember my entire plan for the week, but I think it looks something like this...
-Veggie burgers (Amy's) with sweet potatoes & broccoli
-Summer Vegetable Slow Cooker soup from Fresh from the Vegan Slow Cooker
-Pasta with tomato sauce and Tofurkey Italian sausage, roasted broccoli
-Fried Rice
-Snobby Joes, sauteed kale


This is not a shining week in the lemon house. Real cooking will commence in 2014

I just cleaned out the freezer (hello, freezer burned chickpeas from 2011!) and there are a few things I'm thawing to use this week: some ravioli filling, two sausages, oatmeal raisin cookies (awesome freezer score!).

Tonight I need to cook some potatoes that are going, so I'm making a big batch of mashed potatoes. I also found some faux chicken nuggets from the Asian market that we'll probably try and then a green veggie from the freezer (brussel sprouts, likely). It all sounds weird, but I'm thinking I can make it tasty if I make a gravy or something and throw it all into a bowl with some green onions. What do you guys suggest?

The rest of the week looks like:
- rollatini with lasagna noodles and the ravioli filling (mixture of cashew ricotta, spinach, and mushrooms). I'm making a marinara/pizza sauce for this purpose and to use in other preps.
- homemade pizzas using the sauce I made and whatever veggies I get at the store.
- taco night using the lentil chili meat from Isa Does It and the tzatziki from Vegan Eats World (love that stuff).
- broccoli cheddar soup from Isa Does It

desserts! leftover chocolate chip bread pudding from Vegan Diner and oatmeal raisin cookies I found in the freezer (VCIYCJ recipe, I think).

Not too exciting this week, but I'm glad to be clearing out some stuff.

I'm trying to spend as little as possible before Christmas so I'll be using anything I can find in the fridge so its gonna look like this:

Today - Seitan and peppers from Rabbit Food Cookbook
Monday - Frys Burger & Baked Potato
Tuesday - Redwood Falafle & potatoes
Wednesday - Baked potato & beans
Thursday - Hot Dog Casserole
Friday - Curried hot dog

I also made the Moo Free Seitan from Vegan Sandwiches for lunch and a Malted Wheat Cereal Gingerbread loaf so I didn't have to spend money buying yoghurts and stuff

I'm trying to plan ahead this week. Here is what I have so far:

Tonight: Veggie fajitas wraps
Monday: Leftover Tom Yum Veggie Noodle Soup from yesterday (from VEW) (A side note, this is seriously the best Asian noodle soup I've ever had)
Tuesday: Fieldroast sausage, polenta, and sauted baby Yu Choy
Wednesday: Pizza and salad
Thursday: Good gravy bowl (from Isa Does It)
Friday: Omaha Yakisoba (from Isa Does It)

Usually a day or two changes due to last minute schedule changes. I also want to bake the cranberry muffins from Vegan Brunch.
