I finally got some prep done, for the first time in at least a month!
- loaf of banana bread (V'con) - all oil. . . my applesauce went bad!)
- seitan (V'con) - FINALLY came out right! I caught it right as it boiled.
- double batch chickpea cutlets (blog) - YUM. I may have already devoured these with hot sauce.
- about ten cans worth of chickpeas
- about seven cans of black beans

Some good bare bones prep - next week I'll be doing more ready-made meals or "freezer to crockpot" bags. Yum.

Potato leek soup (IDI)
Fettuccini slim-fredo (Low cal vegan comfort food)

A lot of comfort food for the cold and snow.

Can you tell me more about "freezer to crockpot" bags? I know you can't put frozen things directly into the crock because it might crack from the temperature change. So I'm guessing this is a frozen bag of ingredients that you take out the night before to thaw, throw in the crock in the morning, and have dinner waiting in the evening? I am intrigued!

Basically, yeah! I got the idea from every pin and their mother on Pinterest. There weren't many vegan options to work with, so I experimented on my own. I had some success with converting Seitanic Jambalaya and freezing most of it. . But it worked really well with the meaty beany chili from IDI, since it is a more crockpot-friendly recipe to start with.

I sauteed the veggies in the olive oil, and added them to a gallon size freezer bag with every ingredient but the water and dry lentils. To remind myself, I wrote what to add on the bag, along with the contents and date frozen (of course). I left it to defrost overnight (pro tip: don't leave it on the counter, in case there's a small hole. I did this. Oops). Then, before work, all I had to do was throw the contents of the bag in with the water and lentils, stir a bit, and I was on my way!

I'm using up stuff out the fridge/freezer this week so I'm having:

Monday: Vbites Brussels & Cranberry pate with toast for lunch, Christmas soup with toast for dinner
Tuesday: Vbites Brussels & Cranberry pate with toast for lunch, Christmas soup with toast for dinner
Wednesday: Vbites Brussels & Cranberry pate with toast for lunch, Goulash for dinner
Thursday: Christmas Soup for lunch, Shepherds Pie for dinner
Friday: Christmas Soup for lunch, Chorizo Hash for dinner

I cook on the weekends and eat the same thing everyday for the week.

Breakfast: tomorrow will be the last slice of applesauce bread with walnut butter, then baked oatmeal for the rest of the week
Lunch: lentil salad with roasted carrots, green onions, and lots of cilantro (and for dessert, oranges from the tree behind my house!)
Dinner: Roasted noochy broccoli and black rice
Snacks: pumpkin granola and brown rice/millet/sesame crackers

This week I'm making:

Wild rice and browned seitan stew (from IDI).
Ranch salad with potatoes and smoky chickpeas (from IDI)
Hot sauce glazed tempeh, grilled (VCON), Kasha with dill and mushrooms (AFR) and sauteed kale (ED&BV, recipe for swiss chard but using baby kale greens).
Chocolate mint melties (from ED&BV) -one of my favorite cookie recipes and I didn't get to make them before Christmas due to the blackout in Toronto).

Yum!

Because I'm still on holidays, it feels like every day is Sunday! Yesterday I made a pot of chili in the slow cooker (just a random mix of whatever I had in the pantry/freezer), a batch of smoky squash cheese sauce from OSG (http://ohsheglows.com/2013/10/21/smoky- ... nd-greens/) which I stuck in the freezer for a later date, a batch of dragon noodle salad from IDI, and Thai sweet potato burgers, also from OSG (http://ohsheglows.com/2013/10/28/thai-s ... nut-sauce/). I ate one and the rest went in the freezer :)

Tomorrow, I plan on making tofu-mushroom stroganoff and seitan & broccoli with BBQ sauce (I will probably use tofu rather than seitan), both from IDI. I'm so excited for all the delicious lunches I will have next week! It will make returning to work a little more bearable :)

I'm just cooking for me basically, so when i buy big bags of something I have to finish it within a few days or it will go bad. Thus meal planning is centered around a few of the same veggies. I also decided that I want to eat greens every day in january!

Menu:
-Wholegrain pizza with garlic oil, potato, spinach and soy cream + steamed artichokes.
-Mashed potatoes with kale and roasted zucchini + some sort of smoked bacon-y tofu.
-Potato/spinach/chickpea curry served with rice.
-Lentil salad with greens, roasted potatoes, onions, cherry tomatoes and green beans.
-Chickpea flour omelette with greens and raw tomato sauce.

Most of the dishes are pretty easy to make and all are delicious, healthy and cheap!

This week I'm making:

Andean Aji Bean Stew (from Vegan Eats World) big pot o'that to freeze.
Savory baked tofu sammiches (Savory Baked Tofu recipe from VEW)--just slices of that tofu on toasted wheat bread with mayo, thin tomato slices and alfalfa sprouts.
Horseradish potato salad from Vegan Diner (I have to have potato salad with sammiches--they go together like b&w, Kim and Kanye, Fred and Wilma, Abbott and Costello)
Black eyed peas from Vegan Diner (need to use up celery) with white rice.

Gingery coconut stew with rutabagas and brussels sprouts from the blog
Baked tofu (in the other half of the coconut milk with curry paste)
Crustless quiche for breakfasts
Rice/lentil/snap pea/corn salad with Isa's orange sesame dressing for lunches
Smushed neeps and carrots (seeing as how I had to finish off the other half of the massive rutabaga)
I have never been this organized in my life.
AND the dishes are done!

I went grocery shopping big time yesterday at the farmers market, TJ's and Asian supermarket, so the week ahead is exciting:

- pho chay with maittake mushrooms, choy, tofu and vegan ham
- smokey chickpeas over quinoa/amaranth with kale
- pesto tempeh over spaghetti with marinara (will make red sauce tonight, maybe)
- lemongrass beyond meat banh mihs
- pizza with marinara, homemade mozz. and one of the leftover proteins, plus olives
- Khmer curry with whatever veggies are leftover, since I bought an asceptic container of coconut milk (and also, really want to make coffee creamer again)

I have lots of soup in the freezer, and I know at least one night dad will want to order in something junky, like pizza or fish and chips. So I should be able to go at least a few more days before needing groceries.

It's going to be hot hot HOT this week (over 100F *all* week) so I'm preparing things today that will be good for salads and sandwiches. Marinated and baked tofu, chargrilled eggplant and zucchini, pate, homemade mayo, cashew cheese. I also bought some Redwood chicken pieces and bacon yesterday, and some Tofurkey smoked slices. I have loads of salad veg and fresh fruit - think I'm all set!

It's going to be another IDI week, and cold and rainy in Jerusalem. Yesterday I made (for lunches and likely at least half my dinners this week):
The Chicky Seitan -- although I haven't done anything with it yet, and I froze 3/4 of it
The Chickpea Rice Soup
Butternut Soup
Tempeh Orzilla (with homemade tempeh!)
Giant Oatmeal Cookies

I've still got one serving of the Kofta, which I made friday, left too...that'll probably be dinner tonight.

I reorganized my kitchen this weekend and I've been super inspired to cook this morning. So far I'm planning the following for the week:

- Falafel night (store bought falafel with homemade fixins)
- Broccoli cheddar soup from IDI
- Dragon sauce for salads from IDI
- Carrot Spice muffins from Fat Free Vegan
- Whole wheat pockets based on a Kitchn recipe - like a Cornish pastie - filling will likely be a smokey chipotle mix with butternut squash, black beans and kale. These freeze really well for lunches so I'm going for a double batch this week
- grain salad of some sort
- baked tofu... I've been vegan for almost 8 years and I've yet to make a baked tofu recipe I actually like, but I keep on trying!
