Today I have made / am in the process of making -

Isa's Arabian and Lentil Rice Soup & her Bistro Broccoli Chowder both from Appetite for Reduction
Dill Tahini Sauce from Veganomicon (to top baked potatoes & veg)
Caramel Pecan Bars from Vegan Cookies Invade Your Cookie Jar
Chickpeas & Swiss Chard from The Garden of Vegan to be served with rice and flax oil
my usual roasted bell peppers with onion, garlic & tomatoes to have with pasta

I feel like I can finally menu plan again! Its been so crazy with work and the holidays...
Sun: Vegan Bean Book enchiladas
Mon: pierogis with bread crumb cauliflower from AFR)
Tues: jerk soy curls and rice and beans, pbly from VEW
Wed: pizza night - I'm going to try the Vegan Pizza pepperoni crumbles
Thurs: kimchi dumplings (VEW) and Asian slaw (VBB)

I might make glam chowder for lunch today - still have never tried it and I have shiitakes...

I roasted everything (carrots, onions, sweet potatoes, cauliflower, tofu) and will be making lots of rice/noodle bowls and salads. Yesterday I made a ton of baked oatmeal, so I guess I'm all set for the week.

Caribbean Black Beans from a Moosewood book (basically onions/garlic w/ thyme, allspice & orange juice) with rice in a wrap for lunches
Roasted Brussels & Red Cabbage Soup with Caramelized Onions & Tempeh Bacon
Butternut Squash & Pesto Paninis w/ roasted sweet potatoes as a side
Potato Gratin-ish dish w/ swiss cheese (Cheesy Vegan) & seitan strips w/ steamed kale on the side

Sunday: Haul from my mini-trip to Brooklyn. Vinnie's pizza!
Monday: Has officially become "chilli" night in my house. Instead of cornbread, I'll make fried tots! And cheese sauce!
Tuesday: Baked tofu nuggets, roasted potatoes, steamed brocolli, agave-mustard sauce for the nuggs.
Wednesday: Fried mushrooms, spinach and kale with pasta and a boatload of almond-nooch parm. Side salad.
Thursday: Black bean soup, roasted cauli bites
Friday: Take-out likely
Saturday: Might make chollent and challah bread
Sunday: I'm going to try and make a seitan ham roast (recipe from the Gentle Chef blog) with all the traditional fixings.

This week I'm making:

Vegetable jumble with cornmeal crust (From The Garden of Vegan). A tamale/cornbread top type pie of sorts.
Jesse's Cuban Sensation (a rice and beans dish from Garden of Vegan)
Chickpeas with Fifty Cloves of Garlic and Broccoli (or whatever that recipe is called--from AFR).

A giant vat of minestrone soup for quick and warming lunches or dinners this freezing snowy week.
v'con braised seitan, brussels sprouts, and kale, with sun dried tomatoes.
v'con curried tofu and pumpkin saag.
Maybe v'con escarole and white beans.
Hopefully a batch of ginger bread muffins for breakfasts.

Tortilla soup from AFR.
Quinoa tabbouleh from YRR (to round out the tortilla soup as a meal--this is my go-to tabbouleh I think because it doesn't have cucumber which I'm not crazy about).

Gallo pinto, bulghur and mung bean pilaf, and Yemeni barley bread. I'll try to make some hummus too and I made orange and lingonberry muffins this morning. Today is Saturday, so if I have enough time/energy tomorrow I might make something else as well. I don't have time to cook during the week so I'll make loads over the weekend.

- sushi night! (cream cheeze & roasted asparagus rolls, cucumber cream cheeze inside-out-rolls rolled in crushed wasabi peas, avocado & sriracha-vegenaise rolls, carrot-cuc-avocado rolls, & miso-maple glazed tofu-sesame rolls)
- lemony-pesto rice bowls with baked herbed tofu, spinach and cherry tomatoes
- mac 'n soyrizo
- kitchari
- and i just (finally!) ordered Isa's new book, so something awesome from there!

I went grocery shopping with absolutely no plan in place, and based on what I bought, we will be eating pasta pretty much all week!

Actually, probably Chloe Coscarelli Mac and cheese, spaghetti and spinach balls, leek and bean cassoulet and snobby joes. And cheesey cauliflower soup from the freezer.

ETA: I forgot - I bought beets! Cute little candy cane and Holden beets. They're so much smaller than what I usually buy, and I have no idea what I'm going to do with them roasted beets and carrots with.... Something?

I went IDI crazy prepping all my food for what's going to be a super busy week with no time for cooking.

I made the :
Eggplant Harira
Incan Stew
White Beans with Breadcrumbs (don't remember the exact name)
The Filo Pot Pie (cept I didn't have philo so I made some quick whole wheat biscuits I put on top instead
The Orange Chicky Seitan (but used random seitan I had on hand)
The Peanut curry sauce, stir-fried chard and carrots, and some pearl barley, to build bowls

I also made and incubated a huge batch of tempeh over the weekend, so I can freeze most of it and be stocked up for at least a couple months. For dessert, I've got the spice cookies from 500 Vegan recipes, which I whipped up a double batch of to bring to a dinner friday. I love the flavor, but they're a bit dry and crumbly for my liking...anyone got suggestions on how to improve that?

I made some dilly stew (IDI) and bean balls (VCON) this weekend that will serve us at least two meals, but I pretty much missed the meal planning boat this weekend. My weeknights are going to suck if I don't figure something out for dinners and lunches!

-biscuits with sausage gravy and steamed greens
-chili night with cornbread and all the fixings
-inevitable lazy night with roasted potatoes, chkn nuggets and sauteed brussel sprouts
-spinach, jasmine rice and dal soup, rava dosa on the side
-sloppy joes, fries and steamed brocolli
-cauliflower steaks, potatoes and a brocolli salad
-The dill stew from IDI to end the week probably.
