t - spicy pasta with spinach or chickpea tacos - depending on what i feel like (i have stuff for both)
f - the usual
s- going out to eat
s - chipotle/gym sunday - again another usual!

Tonight is black eyed peas tacos from idi. The rest of the week will be split pea soup, citrus tahini bowl from idi, and possibly glam chowder.

getting lots of use out of idi. It's a great book!

I know its Friday but I have already planned next weeks (and the following weeks) food:

Saturday: Lunch - Cheesy Broccoli Soup (from Chloe's Kitchen), Dinner - Cheesy Broccoli Soup (from Chloe's Kitchen)
Sunday: Coconut French Toast (IDI), Good Gravy Bowl (IDI)
Monday: Lunch - Vegusto Sandwich, Dinner - Cheddary Broccoli Soup (IDI)

I went grocery shopping earlier today and scored massive amounts of: red and orange bell peppers, poblano peppers, okra, zucchini, and lemons, for dirt cheap, practically giving them away prices. So now I have to figure out what to do with it all.

I'm going to make a big batch of sofrito to freeze for future recipes.
Roasted peppers and roasted zucchini to freeze for future use and have on hand to add to sandwiches.
Indian inspired (inauthentic) soup; a sort of rasam/sambar hybrid for quick heat up lunches or dinners all week.
Greek savory rice pudding/pilaf baked in a shaved zucchini "crust" then turned upside down and presented almost like a cake.
I'm thinking about talking my spouse into making their famous baked beans.
The okra is so far only slotted for the soup. I need to figure out what else to do with it.

Ashley, that filling sounds soooo good.

We try to keep a stash of Square Meals in our freezer and use the dough recipe from Simply Heavenly by Abbot George Burke. PPK member JohnP has the dough recipe on his website:

This week I made the Cauliflower and Black Olive Crust Pot pie (Vcon) And also homemade ww burger buns, a double batch of the black beans bugers (Vcon) and tempeh bacon...to top. I've still got some eggplant harira and smoky incan stew left over from last week, so I think I'm good for at least a few days.

Jerk mock chicken and rice.
Okonomikayi.
Chana masala and spinach curry, probably with roti.
Baked or scrambled tofu.
'Fish' pie (experimenting with tempeh steamed with seaweed to get the fish texture/flavour).
Sandwiches, filling as yet undefined. Cheez, tofu, chickpea salad or something.

Isa pizzas for Superbowl Sunday! (VwaV)
Tofu mushroom stroganoff from IDI (still haven't made yet from last week)
I made bagels last night from Vegan Brunch for toast and sammiches later in the week.
Basic baked tofu from IDI for sammiches.
Perhaps some brownie or cookie concoction for sweets. As yet undecided but the maple pecan blondies from E,D&BV are high on the list.

There is a pretty great recipe for whole-wheat pockets on the kitchn blog. I have made different mixtures from the one called for in the post, but the dough is great and freezes/thaws beautifully. Pockets can be yours!

I used this dough recipe as my base too! I modified it a little bit (subbed in millet flour for some of the all-purpose), but it was great. Very easy to work with.

Sandwiches (like veggie burgers, probably) and something with potatoes. The obvious answer is fries, but that doesn't reheat so well. I like leftovers. I might have to use the rest of my chicky seitan to make a BBQ bowl. . . Mashed 'tatoes with veggies, seitan, and BBQ sauce. Yes good. . .

M =Crockpot baked potatoes with steamed broccoli and a few slices of melted cheddar daiya.
T = Veggies stirfry rice with peas, carrots, broccoli, tofu and a basic sauce of tamari and siracha.
W = Crockpot stuffed peppers
TH = Crockpot sweet and sour tofu with jasmine rice, peppers, and broccoli.
F = Zucchini Delight
S = Mac N Cheese with breaded and baked tofu and baked broccoli.

(I eat a lot of broccoli!)

I try to Crockpot on the nights I go to the gym! So much easier then worrying about rushing around and worrying about when my husband is going to eat.

Zucchini Delight is from How It All Vegan and its super easy and yummy to make.
9x13 casserole dish, bake at 375 for 40 minutes.

28 oz can of diced tomatoes
1/2 cup of jasmine rice - dry
1 can of lentils or chickpeas or both
diced zucchini
salt to taste
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp red pepper flakes

Throw it all together and bake! I sprinkle on some vegan mozzarella at the end and let it get melty.

I'm a little late, but my week will likely look like this:

-chilli with daiya, sour cream, jalepenos, scallions, corn bread and corn chips
-roasted potatoes, wegman's chkn nuggets and steamed brocolli
-sunflower mac and cheese from isa does it, steamed asparagus
-indian lentil and jasmine rice soup, accompanied by some dosas
-takeout on Friday (I'm feeling chinese)
-sausage gravy and biscuits, steamed greens
