We have loads of leftovers--tofu scram burritos, Kung pao tofu, enchiladas. Later in the week I'm making the tex-mex casserole from oh she glows.

Monday: Plain Jain Pizza from Vegan Pizzas
Tuesday: Mushroom Broccoli & Sundried Tomato Pizza from Vegan Pizzas

On my radar:

-Homestyle tofu & stir-fried greens of some sort with jasmine rice
-Aloo chole or chana masala over quinoa/amaranth
-Minestrone with chickpeas with homemade bread
-Braised seitan & cabbage with grits
-Pizza with pesto

Columbian Lentils and Rice (from VEW) with the Classic Cabbage Salad with Citrus Vinaigrette dressing (from Viva Vegan!)
Sammiches made with Classic Baked Tofu from IDI and with those sammichs, I'm having the cabbage and chickpea soup, also from IDI.

I have some dill to use up so making the kasha with mushrooms and dill (from AFR) along with grilled hot sauce tempeh (from VCON) and greens--I'm thinking maybe roasted brussel sprouts but maybe leafy greens would be better. Broccolini or rapini or sumpin like that.

Not sure what else--something with beans, probably. I'm thinking maybe the beans and kale dish from YRR over brown rice.

I'm on a tight budget and am limiting myself to whatever cash is in my wallet for groceries this week and I think I have $30 or $40 dollars so whatever foods I can get for that, I'm eatin. I need super cheap things until I get paid again.

Julie Hasson's brownies from Vegan Diner, which I already have the fixins' for.

Sunday: Homemade spaghetti bolognese and mushroom scampi over sauteed spinach and homemade strawberry ice cream for desert!
Monday: Lazy day delivery likely
Tuesday: Massive taco salad with beyond chickn strips - my weekly go to
Wednesday: Phillies game day opener - either ballpark hot dogs or I'll bring in a sandwich from Blackbird
Thursday: Tofu veggie stir fry
Friday: ??

Yesterday I made VEW stuffed artichokes and V'con Caesar Salad with roasted tempeh. We had leftovers from that tonight.
Tomorrow I will make a big batch of v'con gumbo for packing for lunch or easy heat and eat dinners.
I washed and chopped a lot of veggies for easy salad making all week.
I feel some green smoothies coming on for breakfasts.
Between some late work nights and a couple nights eating out with friends, that is probably the extent of cooking that will happen this week.

Monday: Lunch - Sandwich (Maple cured rashers, Redwood Mozzarella and Red Sheese on Sundried Tomato Cob) Dinner - Cheddar and Broccoli Pizza from Vegan Pizzas
Tuesday: Lunch - Sandwich (same as yesterday) Dinner - Maple Bacon Rashers, Scrambled Tofu, Fried Mushrooms & Tomatoes with Potatoes
Wednesday: Lunch - Wrap (Redwood Mozzarella and Red Sheese) Dinner - Quiche (Maple Rasher, Redwood Mozzarella and Red Sheese)
Thursday: Lunch - Wrap (Redwood Mozzarella and Red Sheese) Dinner - Chikn Foo Yung & Chips
Friday: Lunch - Tuno Melt from Sexy Vegan, Hot Cross bun from Ocado Dinner - Redwood Fishless Steak and Chips.

I'm having pizza too! Isa Pizza (mini pizzas) from VwaV. I just made the cashew ricotta, dough and pesto and put in the fridge for making mini pizzas here and there to order this week at my leisure. I had some leftover pizza sauce from my last bout of Isa Pizza's from the freezer and I have to use that up.

Also, the white beans and kale dish from YRR over brown rice.

Some bagel sammiches made with the classic tofu from IDI for sandwich slices--alongside some cabbage and rice soup from IDI which I made last week and froze to fill in any meal blanks if I run out of the other two dishes above before the week runs out.

I'm thinking...

-Something with green lentils: Lentil soup or lentil-roni or dal
-Home-style tofu from Revolutionary Chinese Cooking (been meaning to make this!) with jasmine rice and something green
-Fried rice with smoked tofu & carrots, etc.
-Any-time-of-day breakfast pizza/flatbread rounds with chickpea-rosemary spread, scrambled tofu, sliced potatoes, etc.

(Jlegume brought home a bunch of just-expiring tofu from work!)

Can I freeze frittata?

I made cauliflower (and kale) cheese, using the sauce from the IDI sunflower mac. I added a little mustard and pepper to give it a kick. It was amazing! I'm not even ashamed to admit I ate the entire dish throughout the course of the evening.

Anyone else find it a little awkward cooking in other people's kitchens? I'm at my sister's house all week, babysitting her dogs while her family is vacationing in Costa Rica, and I just don't feel like cooking anything. Too out of my element when all the spices, cutlery, plates, etc. are completely different! Doesn't feel right chopping veggies without my trusted santoku in hand.

^Yeah, I dislike cooking in other people's kitchens. I have my own place set up just so (all the spices I use regularly on hand and well stocked, my favorite knife, peeler, grater and other utensils, etc. at the ready) so cooking anywhere else tends to pale for me. Even in nicer kitchens--like someone who has a fancy chef's kitchen but they don't actually cook so it's more showy and has less practical things that I actually use. I'm like ZOMG, you don't have a pizza stone! I can't cook without one! (*me= kitchen diva*) I need a decent knife and for the love of god, a good peeler. Give me something to work with! Stuff like that.

This week I made:

A lentil chickpea soup from Eat, Drink and Be Vegan.
Julie Hasson's biscuits with sage gravy
The mushrooms, quinoa and chard dish (sherry glazed mushrooms and quinoa it's called, or something like that) from Quick Fix Vegan.
