Today - Apple Pie Oatmeal, Cauliflower Mash with Easy Mushroom Gravy (both from OSG)
Tomorrow - Protein Power Goddess Bowl (OSG)
Tuesday & Wednesday - Indian Lentil Cauliflower Soup (OSG)
Thursday & Friday - Veetee Spicy Mexican Rice with Linda M Rosemary & Red Onion Sausages.

I also made Route 66 Seitan from American Vegan Kitchen for Lunch and will be making the Chickpea Pickle from Peta's Vegan College cookbook for lunch Wed, Thurs & Fri.

I'm trying to eat more nutrient dense foods. I just ate an orange, I'm about to go steam some swiss chard and add salt pepper and a little vinegar, and I have a papaya that is dying to be eaten. Apparently, there are great digestive enzymes in the papaya seeds. So I'm also going to dry those out in the oven and grind them to be sprinkled on something later.

My week will go something like this:

Weeknights:
-TJ's convenience night: Mandarin chkn with broccoli, green beans and pad see ew noodles.
-Mandatory taco salad night featuring the usual romaine, spinach, peppers, onions, jalapenos, red cabbage, beyond chikn, tortilla chips and a chipolte crema dressing
-Mini chikn pot pie topped with biscuits
-Bbq seitan, baked potato, steamed veggies
-Chinese food takeout from the corner place

Weekend:
-Taco night with fresh corn tortillas, soy curls, refried beans and all the usual accompaniments
-Fresh spelt pasta with spinach, shiitake mushrooms and pinenuts for me, and bolognese style for the mushroom-hating partner. Something awesome for desert!

This week I made:

A vegetable barley soup that's pretty basic but delicious. Not from any cookbook source, some recipe I d/loaded from a nutritionist.
A batch of Vegan Brunch bagels.
Salt and Pepper Crispy Tofu (with rice and steamed broccoli). This was a PPK recipe that didn't make Veganomicon but not for lack of love. It's simple and delicious!
A walnuts, artichokes, sundried tomatoes, olives and pasta dish from Quick Fix Vegan.

tuesday: post gym stir fry
we: usual
thursday: cinnamon roll french toast with homemade chia berry jam, pb sauce and fruit with a side of scramble
friday: boyfriend bday nachos!

Tonight (with enough leftovers for 6 lunches): Coconut rice, tomato chana dal, mixed veggie curry.
Whipped up roasted red pepper mac and cheese sauce for later in the week.
Still have plenty of eggplant lentil mole chili from late last week.

ETA: Made an orange blueberry loaf with glaze (for snacking) and a loaf of mixed grain bread.

Because my birthday is this week, things are sort of all over the place:
Tonight, chickpea cutlets. Tomorrow, probably IDI alphabet soup. Wednesday will be chili Mac, using leftover sunflower mac sauce. Thursday will be Thai takeout, because that's my actual birthday. Friday is my big question mark, I'm hoping there's leftovers to clean up from other nights. Saturday is my birthday BBQ, so there will be the usual suspects.

Happy birthday, Moon! This is a beautiful time of year for a b-day too! <3

This week I'm making:

Black eyed peas (from Vegan Diner) with rice to serve over and cornbread biscuits from Vegan Brunch.
Italian rice and beans (from Lolo's website) and Chickpea parmigiana to serve over (from Vegan Eats World).

I was looking at the VEW paella and thinking I'll try that soon.

Monday: Sausage slow cooker casserole
Tuesday: Homestyle Macaroni Salad from American Vegan Kitchen
Wednesday: Mustard Mac Slaw from American Vegan Kitchen
Thursday: Stovetop Macaroni & Cheese from American Vegan Kitchen
Friday: Seitan slow cooker stew

I'm trying to get some new recipes in this week, largely because of the books I got for my birthday. Lots to try! Also, asparagus is finally cheap, so that's on the menu twice.

Tonight: Warm Potato Salad with Grilled Seitan & Asparagus from IDI.
Tomorrow: Frozen veggie burgers, as I plan to be working outside all day and won't feel like cooking.
Monday: Southern Skillet w/ Black Eyed Peas and biscuits from Chloe's Kitchen.
Tuesday: Pasta Slaw and Bean & Barley salad from Vegan on the Cheap.
Wednesday: Pasta Italiano from Chloe's Kitchen.
Thursday: leftovers
Friday: Empowered Noodle Bowl with the orange miso dressing option from Oh She Glows
Then I am on vacation.

Chloe's Chipotle Chop salad (from Chloe's Kitchen)

Prad prik king green bean and crunchy tofu stir-fry over brown rice
Obligatory weekly taco salad with beyond meat chicken strips
Grilled sausage, broccoli salad, and corn on the cob
Tofu scramble and gravy over biscuits, steamed kale

Traveling two nights this week :( but still going to get my cook on!

Tonight: my chilli recipe (tomato sauce based recipe) and cornbread
Monday: falafel pittas with hummus and taziki, and tater tots
Tuesday: lentil tacos with Mexican millet
Friday: easy pasta night. Spaghetti squash for me with veggies. Pasta and jarred sauce for him.

Hopefully this will yield enough leftovers for lunch and nights I am not home
