My week will go something like this:

Sunday: Chickn pot pie
Monday: Mixed lentil dal, pahlak, rice, uttapam
Tuesday: Pasta alfredo with shiitake mushrooms, broccoli, kale and tofurkey sausages
Wednesday: Noochy tofu bites, potato something or other, crispy baked cauliflower
Thursday: Leftovers or taco salad
Friday: out!

Making a big crockpot of seitan today. Will douse it with Wegman's lemon garlic marinade and grill it, then tonight we'll have it with grilled cauliflower and potatoes (probably in more of the marinade), sauteed chard and steamed broccoli.

Also making a batch of Gee Whiz spread. Kiddo will have it on mac tomorrow for lunch, and I'll have it for dinner on potatoes and broccoli.

Then prepping big salads for my lunch M - Th. Going to have romaine lettuce, edamame, quinoa or rice, cucumber, shredded carrots, mandarin oranges and hearts of palm with the Orange Sesame Vinagrette from AFR.

Seitan and BBQ broccoli from IDI
coconut chana saag, also IDI
seitan fajitas and refried beans
Spaghetti squash sautée thingy with leftover edamame pesto, veggies and sausage (clean out the fridge dinner!)
Dragon noodle salad from IDI (sub zucchini and carrots for some noodles)
Falafel burgers also IDI


Well, I certainly am cooking from that book a lot this week! Have not made those falafel burgers yet

-TVP Meatloaf with mashed potatoes, roasted beets and sauteed beet greens
-Fried cashew cheese squash blossoms, pasta with pesto, zucchini, broccoli and tofurkey sausages
-Obligatory weeknight taco salad, tons of veggies, garden-made salsa, beyond meat chicken, chipolte ranch dressing
-Maybe a veggie stir fry with tofu
-Clean out the fridge dinner

I loooove this version of General Tso. It's the one I always make. Just leave the egg step out. The cornstarch adheres well enough to the tofu without it. I dredge and fry in two batches for maximum crispage:

This week I made:

A pasta salad recipe for Isa's upcoming entertaining book (P.S. Yum!)
Southern fried BBQ tofu from Vegan Vittles (my fave breaded tofu dish. The seasoning is perfect).
The hummus, lettuce, tomato and tempeh bacon sammich (an old favorite) from VwaV.
It was a week of totally yummy food.

Next week, I'm probably making the greens and shrooms takeout stirfry from VEW (because I got the noodles for it at Kensington Market last weekend) and the savory tofu stirred in and then something else I haven't decided yet. Maybe a warm potato and lentil salad I have as a recipe I downloaded from somewheres (have a paper copy of it, not sure where it's from).

Sunday: pasta primavera (broc, zucchini, mushrooms, tomatoes, spinach) in a basil-garlic cashew sauce
Monday: Biscuits, bbq rubbed seitan, collards, corn on the cob, slaw, lemon-lime pudding pie
Tuesday: Chickn ceasar salad
Wednesday: Breakfast - tofu scramble, tator tot waffles, tempeh bacon
Thursday: Frozen protein of choice, roasted potatoes, whatever green veggie is left (likely steamed collards) and corn on the cob
Friday: out!
Saturday: Soba noodle salad with veggies, tofu and peanut sauce or maybe that general tso's tofu - looks/sounds so good!
Sunday family dinner: ???

I just bought stuff for the Chili Verde con Papas and Chipotle-Lentil Burgers in AFR, as well as the Korean BBQ Portobellos in IDI. That'll take me almost through the week, as well as some toast and basic tofurkey sandwiches because Dave's Killer Bread was on a killer sale.

I made pizzas on Friday and had a lot of leftover romesco sauce (PPK blog recipe), and I've been eating it on everything, for every meal. That shiitake is delicious!

Last week I made: The peanuts, quinoa, olive and spinach salad from Viva Vegan! I so love that salad! It makes me realize that Terry's Salad Samurai is going to be a killer book when I finally get my hands on it. If you do make this salad, I recommend doing the candied peanuts for it (as Terry recommends in the intro) and if you have leftovers, keep the peanuts separate and sprinkle them on just before serving to preserve their texture and so every serving tastes fresh!

Also made last week: the Puttanesca Pomodoro (from Isa Does It) = LOVE and with that, some lemon herb tofu triangles from Dreena's book Vive Le Vegan.
Also the seitan pinto bean sausages from Isa Does it to freeze. Really easy and tasty though I haven't used them in anything yet, but I had a bite of one before wrapping for the freezer--yum! Will prolly use in biscuits and gravy and jambalaya or sumpin.

This week I'm making :

Warm potato and lentil salad.
Finally make the stir fry I love from VEW with shittakes, Asian greens and thick what noodles. I'll add diced savory baked tofu to that stir fry and call it a delicious day!

Also a yummy chickpea and pastry dish from Isa's upcoming entertaining book!!! Probably later this week.

Today i am making 36 250ml bottles of barbecue sauce for our farm stand, polenta terrine for company, smoked tamari-lime tofu for lunches, lemon dill yellow beans, mashed potatoes, and maybe other things if I can muster up the energy. Or maybe the above-linked General Tso's because it sounds easy and delicious!

I'm breaking in a new crockpot tomorrow with Hot & Sour soup. I'm also making lentil tacos and pasta with "leftover sauce". Basically I am blending leftover ratatouille with some other stuff to make a pasta sauce. It's part of my new "don't waste so much shiitake" challenge. Might also make shiitake Bahn mi sandwiches from IDI. I love that sandwich!

I believe I got the recipe from you--if you posted a link to this salad recently somewheres else, on another thread though I can't remember which one. I thought it was really good! Filling and nice to eat. Kept well in the fridge for a few days so I had easy lunches during the week.

This week I made Lemon herb tofu (again!--I make this a lot as it goes with so many things and can round out a pasta dish nicely) and then alongside just this browned garlic, pepper flakes in olive oil and parsley toss with pasta that always a nice quickie weeknight throw together the dregs of your pantry type thing.

Also, a tester recipe from Isa's upcoming book (that's super tasty) and you can put in puff pastry shells and a salad alongside that just of lettuce, wedges of tomato and lemon vinaigrette.

I also made VEW's Thai Fried Rice with a Pineapple Kick (I think it's called) for a potluck last night and I've made that recipe before (always for potlucks, it seems like a good potluck dish) and folks seemed to like it. I made a TON and I took about two servings home to freeze because I already have enough food made for the week, and my friend who hosted kept one serving for himself so I guess the rest was eaten which was quite a bit which pleases me (in the presence of all omnis) though these folks are my friends and always open minded and receptive to my vegan food :).

I have a surplus of white chocolate chips right now and should do something with some of them soon. Either my favorite blondies from Dreena's E,D&BV (the one with the maple pecan topping and white chocolate chips) or white choco-chip macadamia cookies, or sumpin.
