not for nothing, but you have started a bunch of these threads. have you tried using isa's recipe finder (or any recipe finder, really) and specifying the ingredient you want to use?

i'm sure people have lots of ideas, but it'd probably be more useful if you searched around, found something awesome to do with them, and then came back and posted about it in food porn or something, y'know?

Here are my 3 favourite ways to deal with overripe bananas:

1. lower fat banana bread from Veganomicon
2. marbled banana bread
3. break the bananas into chunks and freeze overnight, then store in ziploc bag; perfect for smoothies!

Did a forum search and grabbed a few ppk recipes from the save file.

Although I suppose we've pretty much given up on re-creating the 'what to do with X?' master list.

peel, dice, freeze

when ready for a treat put 1 banana worth of frozen dicings, quarter cup milk of your choice, and 1/8 cup peanut butter in food processor...and now you have peanut butter and banana soft serve

i toss them in the freezer with their peels still on (in a big gallon baggie). then when i'm ready to use them, i run them under a little hot water and then cut/scrape the peels off with a sharp knife. easy peasy. (cold, but easy. and the peels keep them from getting freezer burnt.)

I'm with carrot on this one. When I have too many, I also put them in the freezer. The thing I probably bake most with them is banana everything cookies from vegan cookies invade your cookie jar.

You can bake banana bread in wide mouth pint jars and then stick on the top when they're still hot...sealed fresh banana bread! I would ask teh internetz for safety info before you do this because it's been a long time since I've read about it, and I don't want to forget something and kill you. But anyway, it worked great when I tried it and stayed fresh for the few weeks before getting eaten.

Wow, that is pretty nifty. I'll see if I can find something about it online and dig up some mason jars.

I found a few different ones, they all seem to call for eggs but with enough bananas it should be unnecessary. Substituting the eggs with bananas should work out.

I'm all for the chopping + freezing (good for binana gluts).

Chop 3 nanas, freeze for a couple of hours then blend up with 3tbsp cocoa powder and 6tbsp peanut butter. Noms.

Don't freeze for too long otherwise the blender starts smoking and melting. :(

Like crusty rat- freeze and make ice cream if you have the equipment. I take the frozen fruit and give them a quick rinse in a colander to make them a teensy bit softer (along with frozen strawberries, etc).

As for the "what to do with X" thread, i feel bad for you guys, it sure ain't for lack of trying.....

My fave is frozen chocolate covered bananas. Easy as shiitake and like my favorite dessert ever.

That marbled banana bread looks so good! I like to just caramelize them until they're mushy to make some sort of banana butter to spread on top of pancakes (drizzle on some maple syrup and it's the best breakfast ever).

I think the banana-chocolate muffin recipe in Joy of Vegan Baking takes like 4 bananas. Since jumbo muffins are the One True Muffin Pan Size (anything smaller is for cupcakes, sorry), the recipe only makes six, so you should double it at least. Muffins freeze ridiculously well, something I learned with delight right after having a baby.
