I need to make red velvet cupcakes tomorrow for a family party. What is the best recipe? Also, can I make a cream cheese frosting without Tofutti?

What about the recipe in VCTOTW? I haven't tried it, but it looks good.

and I don't know about the tofutti-less cream cheese frosting, but you could make a buttercream frosting I guess.

I love the one from 100 Best Vegan Baking Recipes. It comes out really moist and just all around good. For some reason I've never made the VCTOTW ones, though, so I can't compare.

I don't love Tofutti frosting, I usually do buttercream with a tsp. or so of lemon juice for the tangyness. I'm just guessing at the amount of lemon because I do it by feel and taste, but you certainly don't want enough for it to taste "lemony." If you're a weirdo and have citric acid laying around (like me...it helps make apples not brown!) I imagine a dash or so of it may work, too. For this type of frosting I usually do them minimum amount of shortening I think I can get by with to make it stable because I prefer to have EB as the primary fat.

The VCTOTW one is delicious! Just a warning, the batter always seems a bit thin to me, but it turns out great every time.

Also the frosting in VCTOTW that is supposed to go with the red velvet cupcakes is really great. It is not a cream cheese one but one that is based on a cooked custard. It is really light and fluffy and all kinds of awesome. I like that it is less fatty than the buttercream type of frosting because I hate that mouthfeeling that a big tablespoon of buttercram produces. And it is also too filling so I cannot eat as many cupcakes as I'd like to.

Actually, it (the old-fashioned, custard-based one) has become my go to frosting for any cupcakes, I just vary the flavourings.
