Are they one and the same? The new cookbook I've been using calls for evaporated cane sugar in a lot of the baking recipes, and I can't seem to find it. I've been to WF, but not my local natural foods place yet. Is it maybe called by another name? I should probably just google it, eh?

you can just use whatever sugar. it's a different process for making sugar from sugar cane. palm sugar would be something different i guess, but you could probably use it if it's a granulated sugar.
if you look at health food store brands of sugar like florida crystals they should say that they are evaporated cane juice.
