A muffaletta! I have never heard of those but they look very similar. Also, eek, forgot to warn about meat pictures, sorry! They are super gross so, you know, be warned etc.

Maybe it could be made with seitan. Eggplant and I are feuding, is the thing.

You know what else needs to come with a gross meat picture warning? Isa's beet burger! That picture is freaking me out. I know it's made of yummy tasty nice beets; but it looks just like a gross bloody beef hamburger! Ok, so Isa sort of mentions that, but you pretty much have to view the picture before you get to her mention of how it disturbingly looks like meat. Sorry Isa, and sorry for the thread hijack. I'm just feeling a bit traumatized (but not so traumatized that I might not try making the beet burger, which actually sounds very delicious! Hmmm, will it look as disturbing in real life as it does in the photo? Probably.)

I follow Isa on Flickr, so I came across the beet burger picture before it was attached to the recipe and had a minor freak out. Not because it looked like Isa was making meat burgers, but because the beet burgers just look so much like those burger patty hockey pucks my mom buys from Costco and UGH UGH UGH it made my skin crawl.

I just looked up the vcon recipe and now I know what I'm making for my next potluck!

I think some tempeh bacon would be a great replacement for those eggplant slices if you don't want them.
