i got three packages from their indiegogo campaign.

it's really tasty. however, you can still taste the coconut, and i wish it were a bit more bacony, but it's still a great bacon substitute. unfortunately they broke apart a bit during shipping, but i can just put those on salads.

i remember having had a coconut bacon at a local deli, and it was much thicker, and i don't remember tasting any residual coconut flavor, and i wish phoney baloney's would eventually come out with a thicker option. i can see these delicate bacons getting lost in a really hearty sandwich. maybe some day.

i made an elvis sammich, and it's really tasty! the coconuttiness works with the fruitiness of the banana.

I'm going to try making my own. I have the right style of coconut shreds so it should work.

There is a recipe in AVK (2010), too-- when I get home I'll post it here. I hate coconut but like it this way.

Isn't the TJ's coconut already roasted? I'm not sure it would absorb the flavors well but not sure.

Here is my recipe if anybody wants to give it a go. It's from American Vegan Kitchen (2010). Let me know if anyone tries it!

The first time I had coconut bacon was in Burlington, VT, at a little vegan eatery that didn't last long. I can't remember the name of it, but it was "New" something if any Vermonters remember it.

Coconut "Bacon" Bits

1 tablespoon soy sauce
1 teaspoon pure maple syrup
1/4 teaspoon prepared yellow mustard
1/4 teaspoon cracked black pepper
1/4 teaspoon toasted sesame oil
1 teaspoon liquid smoke
1/8 teaspoon smoked paprika
1/2 cup unsweetened flaked coconut (not shredded)

Preheat the oven to 300 degrees F. Line a 9 X 13 baking sheet with parchment paper. Combine all the ingredients on the baking sheet. Stir to coat.Spread the mixture evenly on the baking sheet.

Bake about 20 to 30 minutes, checking frequently until and dry and nicely browned, turning occasionally. Do not burn it. It will crisp as it cools. When completely cool, transfer to an airtight container and store up to 2 weeks at room temperature. To recrisp, bake at 300 for 3 minutes.

Makes 1/2 cup

ok. i put some in chocolate chip cookies (the sticky fingers recipe), and they were a smashing success, but then i added them to peanut butter banana muffins, replacing the chocolate chips (http://www.veggiegirl.com/2012/10/30/pe ... a-muffins/) and the flavor totally dissipated. now it's just PB banana coconut muffins with a slightly odd taste. if i try this again, i think i will try either bacos or fakin' bacon. something with the flavor all the way through. (and instead of adding it to the entire batch, i'll pull out a scoop or two to mix it in.)

I'm not a huge bacon person, but I'm compelled to try new vegan products when they come out. I've bought two bags of this, and so far I haven't cooked anything with it because I end up eating it all out of the bag.
