I've never eaten one before! I have a bag of them sitting in my fridge.. Does anyone have any good recipes/ideas using radishes?

Edited to add: I just realized that the "what should I do with" thread was closed. Sorry!

Well, the obvious answer is that they're great sliced thinly and tossed into salads. I really like roasting them, though. Trim the root and foliage ends, toss in olive oil with salt and pepper, and roast at 425°F for 20-25 minutes, until they are slightly browned and fork tender. It really brings out their sweetness and makes a lovely side dish, served maybe with a quinoa pilaf and some baked tofu.

I also roast mine, as I'm not a huge fan of them raw. Do they still have the leaves attached? You can make a pesto from the greens to put over the roasted radishes and add some other roasted veggies. It's good over rice/quinoa/risotto to make it a meal, and I'd imagine it'd be good over pasta, especially a small pasta such as orzo, as well.

Yeah, I've gotten huge bunches of radishes two weeks in row in my CSA. I like to eat them raw in salads, but I'm looking for ideas for the greens.

Pickles! There's a quick pickle recipe with radishes for the Bahn mi in Vegan Sandwiches save the day that is awesome.

Never thought of roasting them, that sounds awesome.

Raw, sprinkled with salt - brings out their sweet-but-peppery flavour! You can cook the leafy tops like greens/spinach/etc - saute or steam (though don't eat raw as they're slightly stingy).

Slice them thin with a mandoline and dip in hummus!

Sliced thinly and laid on (heavily!) buttered bread to make a sandwich. They also need to be salted on this simple sandwich. Yums.

Yes, radish sandwiches are delicious! (I also eat radishes just with Earth Balance, no need for bread or salt.)
