My leftovers had vanished when I got home from work, so I ended up eating a box of Road's End mac and chreese with EB and broccoli. I am the picture of vegan health.

I made a stovetop mac & cheese using some leftover roasted acorn squash based cheese (based on the ACV chipotle recipe, but thicker & milder this time around) and ate it on top of a raw kale salad based on the one from the Whole Foods salad bar. It has nooch, lemon juice, apple cider vinegar, sea salt, tahini and olive oil (okay, not raw but the kale itself isn't cooked) and I'm so glad whenever I make it.

I think I need Mac and cheese. What's the laziest possible recipe? I'm too dizzy to do anything strenuous and a,ready have emergency cupcakes planned.

If you have any leftover storebought or homemade cheese around, you can easily do a stove-top, too (which is what I totally did last night).

Tonight was baked tempeh cubes in a balsamic/maple/garlic/soy/hard cider sauce with sauteed bitter greens and brown rice, and a whiskey cocktail.

Made Lentil salad from Veganomicon, but then ended up going out for dinner unexpectedly with friends and I had basil fried rice with tofu, no egg, extra garlic, yum.

It's 1 box of brownie mix + 1 can of pumpkin. The ultimate in laziness. They were a little chewy when they came out of the oven last night, but I'm hoping the texture will be better today. I was pretty happy to eat one warm with a scoop of vanilla coconut ice cream!
Lots of brownie mixes are vegan. I used a Ghiradelli mix (only some of theirs are vegan, so watch out).
