last night: stir fry night w/ noochy oven-fried tofu, jasmine rice, yu choy w/ sesame/miso/garlic, sesame green beans (the last of our striped garden glory), more veg in a malaysian coconut curry sauce (that I spilled 2x as much coconut cream as intended, so whoa, rich)

tonight: having a friend over for pizza night! HVP refrigerator dough, fresh marinara, whipped tofu ricotta, roasted garlic, VEG herbed seitan, peppers, swiss chard and a giant romaine/kale salad.

I had both leftover Oh she Glows lentil apple walnut loaf, mashed potatoes and steamed peas and corn and a whole pizza hut veggie pizza. because reasons.

I don't know why I always try to convert my parents to liking food they thing they don't, but I'm making pork spring rolls with two dipping sauces, orange-scented broccoli from AFR, rice, general tso pork and maybe a salad.

tonight: thinking southern plates w/ stewed calypso beans, the last of the miyoko ribs, oven baked green tomatoes, chard, buttered biscuits or toast

Stir fry of lots of veggies with tofu over konjaku noodles.
I spent the weekend away living mostly on white bread. There was also some corn and pasta. I had enough carbs over 3 days for the whole month, and I love carbs. I'm all about protein and veggies right now.

I couldn't think of anything to make but I needed some aquafaba for tomorrow so I made chickpea cutlets and did some peas and green beans with them. Chickpea cutlets are soooo good.

I've been recipe testing for Richa (yay!), but since I live alone, I have all these leftovers that I have been eating for every meal. They are all really delicious, but it's getting repetitive.

SO DAMMIT, tonight I'm having tacos. Gonna make some of my fancy jalapeno cilantro sauce and do it up real good.

Tonight I made the tofu mushroom stroganoff from "Isa Does It" (really good!)
A salad made from my garden lettuce, kale, and arugula (simple dressing of juice of lemon and tiny drizzle of sesame oil)
And for desert a raw lime cheesecake from a recipe I got out of a British vegan magazine

Tofu omelet with mushrooms, onions and red pepper on a toasted french roll with earth balance, sweet earth bacon and chao cheese. Cast iron fried potatoes and ketchup on the side. SO EXCITED.
