We had seitan sandwiches with Nayonnaise, kale, tomatoes, creole seasoning and fresh cracked pepper. Tortilla chips and fresh salsa, too.
And may I say that we are officially in love with seitan, now that I learned how to make it right! I was doing all sorts of wrongs when I made it in Colorado but now, it's on. It was very creepy how similar it was to real meat, especially the texture.

I have tofu marinating in lime juice, garlic and rosemary in the fridge - now just need to decide on a carb to go with.

Chickpea paprikash from Urban Vegan with basmati rice. Cooked some chard but didn't clean it well enough because it tasted really dirty. Sad.

I made my best pizza ever! So good. Cornmeal crust from VT, tomato sauce, some cheddar Daiya, tomatoes, green peppers, mushrooms, and spinach. MmmmM.

We had a special Halloween dinner tonight, and ate it while watching Harry Potter 4 Rifftrax! Pumpkin curry with basmati rice, balsamic roasted green beans and pumpkin pasties for dessert.

Fried seitan cutlets, roasted delicata squash, and garlicky kale. The seitan is cooking kinda spongey, though, even though I was pretty sure lowered the heat when I was supposed to.

I'm throwing everything in the oven tonight: I got this huge stick of brussel sprouts and some little yellow finger potatoes at the farmer's market. Brussels might get the v'con treatment, potatoes will probably get my favorite potato seasoning: garlic, rosemary, olive oil, salt and pepper. I'm also marinating some tempe to bake.
